Ingredients- Pappardelle pasta, 100g
- Shrimp, 7 pieces
- Manila clams, 1 handful
- Minced garlic, 1 Tbsp
- Olive oil, 3 Tbsp
- Tomato sauce, 1 paper cup (approx. 180ml)
- Dried chili flakes (peperoncino), 1 Tbsp
- Gochujang (Korean chili paste), 1 Tbsp
- Cherry tomatoes, 5 pieces (halved)
- Salt, a pinch
- Black pepper, a pinch
- Butter, 1 Tbsp
- Coconut milk, a little (for garnish)
Cooking Instructions
Step 1
Bring a large pot of water to a rolling boil. Add about 1/2 Tbsp of salt and cook the pappardelle pasta for about 10 minutes until al dente. Drain the pasta and toss it with 1/2 Tbsp of olive oil to prevent sticking.
Step 2
Heat 1/2 Tbsp of olive oil and 1 Tbsp of butter in a pan over medium heat. Once the butter is melted, add the shrimp and cook until they are golden brown on both sides. Remove the shrimp from the pan and set aside on a plate.
Step 3
Add the remaining 2 Tbsp of olive oil to the same pan. Add the minced garlic and dried chili flakes, and sauté over medium-low heat until fragrant. Be careful not to burn the garlic.
Step 4
Add the Manila clams to the pan and stir-fry over high heat until they start to open. Once the clams are open, stir in the tomato sauce and gochujang. Pour in about 1/2 paper cup of the reserved pasta water and bring to a simmer until the sauce thickens slightly.
Step 5
Add the halved cherry tomatoes to the sauce and cook for a minute. Add the cooked pappardelle pasta and the reserved shrimp. Toss everything together until the pasta and shrimp are well coated with the sauce. Season with salt and pepper to taste, keeping in mind that the clams and sauce already contain salt.
Step 6
Transfer the spicy seafood pasta to a serving plate. Drizzle a little coconut milk over the top for a creamy finish. Serve immediately and enjoy!
