Ingredients- 1/4 head of well-fermented kimchi (approx. 300g)
- Pork (neck or belly) 300g
- Half a block of tofu (approx. 100g)
- Half a green onion
- Half an onion
- 2 Korean chili peppers (cheongyang peppers)
- 1/2 Tbsp minced garlic
- 1/2 tsp MSG-based seasoning (Dasida) (optional)
- 4 Tbsp red pepper flakes (gochugaru)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 Tbsp cooking wine (mirin)
- 3 Tbsp soy sauce
Cooking Instructions
Step 1
First, let’s marinate the pork. In a bowl, combine 300g of pork with 3 Tbsp soy sauce, 1/2 tsp black pepper, and 2 Tbsp cooking wine. Mix well and let it marinate for about 10 minutes. This step helps tenderize the pork and remove any gamey odors.

Cut the kimchi into bite-sized pieces, about 2-3 cm. This size is perfect for stew, providing a good texture in every spoonful.

Slice the onion about 0.7cm thick and cut the tofu into roughly 1.5cm thick pieces. Avoid slicing the tofu too thinly, as it might break apart while cooking. Aim for substantial pieces that hold their shape.

Slice the green onion diagonally and the Korean chili peppers. The chili peppers will add a nice kick, but feel free to adjust the quantity based on your spice preference.
