  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 2 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Anyone

Main Ingredients

  • Pork (for stew) 250g
  • Sesame oil 1 Tbsp
  • Gochujang (Korean chili paste) 3 Tbsp
  • Zucchini 1/2
  • Onion 1/3
  • Soup soy sauce 3 Tbsp
  • Minced garlic 1/2 Tbsp
  • Cheongyang chili pepper 1
  • Water 500ml

Cooking Instructions

Step 1

First, heat 1 Tbsp of sesame oil in a pot and stir-fry the pork over low heat until cooked through. Cooking on low heat is key to tenderize the pork without burning. Continue stir-frying until the pork turns opaque.

Step 1

Step 2

Once the pork is mostly cooked, add 3 Tbsp of gochujang and continue to stir-fry. This will help the gochujang meld with the pork drippings, creating a flavorful base. Stir-fry for about 1 minute to enhance the aroma of the gochujang.

Step 2

Step 3

Pour in 500ml of water and bring to a simmer over medium heat. As it simmers, the flavors from the gochujang and pork will infuse into the broth. Reduce the heat slightly once it starts to thicken.

Step 3

Step 4

While the broth is simmering, prepare the vegetables. Slice the zucchini into half-moons and thinly slice the onion. Cut them into bite-sized pieces that will cook nicely in the stew.

Step 4

Step 5

Add 3 Tbsp of soup soy sauce to deepen the umami flavor of the stew. This will also help balance the overall seasoning. Feel free to taste and adjust the seasoning as needed.

Step 5

Step 6

Add the pre-sliced zucchini and onion to the pot and let them simmer. The vegetables will soften and release their natural sweetness, adding another layer of flavor to the stew.

Step 6

Step 7

When the vegetables are partially cooked, stir in 1/2 Tbsp of minced garlic. The garlic will add a pleasant pungency that complements the spicy gochujang. Let it cook for another 1-2 minutes.

Step 7

Step 8

Finally, add 1 chopped Cheongyang chili pepper for an extra kick of spice. Your delicious and hearty Pork Gochujang Stew is now ready! Enjoy it piping hot with a bowl of rice.
