While there are countless ways to make this beloved dish, today we’ve followed Baek Jong-won’s popular recipe to create a rich and satisfying stew. It’s especially delicious when enjoyed after a hearty meat meal! Get ready for a bowl that perfectly complements freshly cooked rice.
Kimchi Jjigae Main Ingredients- 1 cup well-fermented kimchi (based on paper cup)
- 1 cup pork (stew cut, based on paper cup)
- 3 cups water (based on paper cup)
Seasoning for Flavorful Stew- 1 Tbsp fermented shrimp (based on 15ml measuring spoon)
- 1/2 stalk green onion (sliced diagonally)
- 1 green chili pepper (or Korean spicy pepper, sliced diagonally)
- 1 Tbsp minced garlic (based on 15ml measuring spoon)
- 1.5 Tbsp red chili powder (based on 15ml measuring spoon)
- 1 Tbsp soy sauce for soup (based on 15ml measuring spoon)
- 1 Tbsp fermented shrimp (based on 15ml measuring spoon)
- 1/2 stalk green onion (sliced diagonally)
- 1 green chili pepper (or Korean spicy pepper, sliced diagonally)
- 1 Tbsp minced garlic (based on 15ml measuring spoon)
- 1.5 Tbsp red chili powder (based on 15ml measuring spoon)
- 1 Tbsp soy sauce for soup (based on 15ml measuring spoon)
Cooking Instructions
Step 1
1. Prepare all your ingredients. Tip: ‘1 cup’ refers to a standard paper cup, and ‘1 Tbsp’ refers to a 15ml measuring spoon for accurate measurements. Chop the kimchi into bite-sized pieces.

2. In a pot, combine 3 cups of water, the pork, and 1 Tbsp of fermented shrimp. Bring to a rolling boil over high heat for about 10 minutes. As the stew simmers, the liquid may reduce, so it’s good to add a little more water to replenish it as needed.

3. The fat that renders from the pork adds wonderful flavor to the Kimchi Jjigae, which is why it’s often said to taste even better the next day! This step allows the delicious essence of the pork to infuse into the broth.

4. Now, add the chopped kimchi to the pot, followed by 1.5 Tbsp of red chili powder to enhance the flavor. The tanginess of the kimchi and the mild heat of the chili powder will create the foundation for a delicious stew.
