Ingredients
  • 1 packet Yeol Ramen noodles
  • 1 block soft tofu (350g)
  • 500ml water
  • 1/3 stalk green onion (about a handful)
  • 1 Tbsp minced garlic
  • Pinch of black pepper
  • 1 egg

Cooking Instructions

Step 1

First, prepare the green onion by thinly slicing about 1/3 of a stalk. Having this ready beforehand makes the cooking process much smoother.

Step 2

Carefully cut the block of soft tofu in half using a knife. This helps in portioning and handling it easily.

Step 3

We’ll use half of the soft tofu as a garnish. To keep it intact and presentable, slice it into round, thick pieces. Set this aside separately from the tofu for the stew.

Step 4

Pour exactly 500ml of water into a pot. The amount of water is crucial for achieving the right ramen noodle texture and the depth of the soft tofu stew flavor.

Step 5

Add both the dried vegetable mix and the soup base powder from the Yeol Ramen packet into the pot. Adding the soup base first helps to develop a richer broth.

Step 6

Gently add half of the prepared soft tofu (the portion for the stew) into the pot. You can add it as a whole piece.

Step 7

Using a spoon, gently mash the soft tofu in the pot. It’s best to mash it slightly, leaving some small chunks rather than making it completely smooth, to enhance the texture.

Step 8

Now, place the pot over high heat and bring the broth to a rolling boil. Boiling the broth is essential for properly cooking the noodles and other ingredients.

Step 9

Once the broth is boiling vigorously, add the Yeol Ramen noodles. It’s a good idea to gently separate the noodles as you add them to prevent them from sticking together.

Step 10

When the noodles are slightly softened but still a bit undercooked, it’s time to add the minced garlic. Adding garlic at this stage will significantly enhance the aroma and flavor.

Step 11

Add one tablespoon of minced garlic and stir well with a spoon to ensure it’s evenly distributed throughout the broth. Allow the garlic flavor to meld into the soup.

Step 12

Season with a pinch of black pepper, according to your preference. Pepper helps to eliminate any potential ‘off’ smells and adds a pleasant spiciness.

Step 13

Add the handful of pre-sliced green onions to the pot. The fresh aroma of the green onions will further enhance the overall taste of the dish.

Step 14

Now, carefully crack one egg directly into the pot. Try not to break the yolk as you place it in.

Step 15

Finally, artfully arrange the reserved decorative pieces of soft tofu on one side of the pot. Ladle some of the hot broth over the egg and tofu garnish a few times to gently cook them. This completes your delicious Soft Tofu Yeol Ramen! Avoid overcooking; a brief simmer is all that’s needed.

Step 16

Enjoy your freshly made, warm, and flavorful Soft Tofu Yeol Ramen, especially paired with some well-fermented kimchi. You’ll experience a perfect balance of spiciness and creamy tenderness.

Step 17

After you’ve savored this delightful ramen, don’t forget to try adding some rice to the leftover spicy broth! It makes for an incredibly satisfying and hearty meal.
