Do you have sour kimchi at home that doesn’t seem to get used up, even after boiling or stir-frying? I found that simply seasoning it results in a delicious stir-fried kimchi flavor without the usual hassle. Here’s my super simple seasoned kimchi recipe.

Ingredients

  • Sour Kimchi 1/2 bowl (approx. 150g)

Seasoning

  • Sugar 1/3 Tbsp (adjust to taste)
  • Sesame seeds 1/2 Tbsp
  • Sesame oil 1/2 Tbsp

Cooking Instructions

Step 1

Finely chop the sour kimchi into bite-sized pieces. If you have a lot of kimchi, gently squeeze out some of the excess liquid. This helps the seasoning adhere better and prevents the dish from becoming too watery. Be careful not to squeeze too much, or you’ll lose flavor.

In a bowl, combine the chopped kimchi with all the seasoning ingredients: sugar, sesame seeds, and sesame oil. Gently mix everything together with your hands, like you’re massaging the ingredients, until the seasoning is evenly distributed. Avoid overmixing.

Transfer the seasoned kimchi to a serving dish. It’s delicious to eat immediately! If you’re not serving it right away, store it in an airtight container in the refrigerator. This seasoned kimchi is not only a wonderful side dish on its own but also makes a fantastic topping for bibimbap, noodles, or muk-bap (rice in jelly soup).
