Easy Saury Kimchi Stew Recipe for Solo Living
A simple and delicious saury kimchi stew that even those living alone can easily make. This stew is packed with flavor and is perfect for a hearty meal.
Ingredients- 1 can of saury (including the liquid)
- 1/4 head of well-fermented kimchi
- 2-3 cups of rice water (or plain water)
- 1 tablespoon sugar
- 2 tablespoons sesame oil
- 1 tablespoon red pepper flakes (gochugaru)
Cooking Instructions
Step 1
Start by stir-frying the kimchi. In a pot, add about 1/4 head of kimchi, chopped into bite-sized pieces. Drizzling 2 tablespoons of sesame oil over the kimchi before stir-frying will significantly enhance its aroma.
Step 2
Stir-fry the kimchi over medium heat until it becomes slightly translucent. This process mellows the sourness of the kimchi and brings out its sweetness. Add 1 tablespoon of sugar and continue to stir-fry for about 2 minutes. This step helps to deepen the umami flavor of the kimchi.
Step 3
Now, prepare the canned saury. Add the entire can of saury, including its liquid, into the pot. Handle the saury gently to prevent it from breaking apart.
Step 4
Pour in 2-3 cups of rice water. If you don’t have rice water, plain water works just fine. Add 1 tablespoon of red pepper flakes for a spicy kick, and bring the stew to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for another 5-7 minutes to allow the flavors to meld. Finally, taste the stew and adjust the seasoning. If it’s too salty, add more water or rice water. If it’s not salty enough, you can add a little more kimchi juice. Your delicious saury kimchi stew is ready!
