Today, I decided to make a side dish with a generous amount of garlic scapes I bought. By lightly blanching them and then tossing them with a spicy gochujang dressing, I’ve created an incredibly appealing banchan (side dish) bursting with crispness and fragrance. Basic Ingredients- 1 handful of garlic scapes (approx. 200g)
- 1/2 Tbsp minced garlic
- A pinch of coarse sea salt (for blanching)
Spicy Gochujang Dressing Ingredients- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- 1/2 Tbsp sesame seeds
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp gochugaru (Korean chili flakes)

Cooking Instructions
Step 1
First, prepare 1 handful (about 200g) of garlic scapes. Wash them thoroughly under running water to remove any dirt or debris, and then ensure they are completely dry. Trim off the ends and cut them into bite-sized pieces, about 4-5 cm long.
Step 2
Bring a pot of water to a boil. Once boiling, add the prepared garlic scapes and a pinch of coarse sea salt. Blanch them for a very short time – just about 30 seconds, essentially dipping them in and taking them out immediately. The purpose of this quick blanch is to remove the slightly pungent or ‘astringent’ taste characteristic of garlic scapes. However, over-blanching will destroy their delightful crispness, so it’s crucial to keep the time brief.
Step 3
Now, let’s make the delicious spicy gochujang dressing. In a mixing bowl, combine 2 Tbsp gochujang, 1 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp sesame oil, and 1/2 Tbsp sesame seeds. Stir everything together with a spoon until well combined and smooth.
Step 4
Place the blanched and drained garlic scapes into a wide bowl. Add 1/2 Tbsp of minced garlic and pour all of the prepared spicy gochujang dressing over them.

After adding the dressing, gently toss and mix everything with your hands. Ensure the garlic scapes are evenly coated with the sauce. Mix gently to avoid breaking the scapes, allowing the dressing to coat them beautifully.
