When you crave a warm, clear broth during the cooler seasons, let’s make a delicious spicy potato mushroom soup. This soup is perfect for a comforting meal, featuring tender potatoes and savory mushrooms with a delightful kick from chili peppers.
Potato Mushroom Soup Ingredients- 3 potatoes
- 1/2 bag mushrooms (e.g., oyster or shiitake)
- 1/2 onion
- 2 cheongyang peppers (or similar hot peppers)
- 1.5L water
- 2 eggs
- Scallions, a suitable amount
- 2 Tbsp YeonDu (Korean soup soy sauce) or regular soy sauce
- 1/3 Tbsp salt (to taste)

Step 1
Let’s prepare the ingredients for our spicy and refreshing potato mushroom soup!

Wash all ingredients thoroughly. Peel and clean the potatoes and onion. Trim the mushrooms and give them a quick rinse if needed. Chop the cheongyang peppers and scallions. Lightly beat the eggs in a separate bowl.

Cut the potatoes into thick matchsticks, about 0.5 cm thick. Cutting them a bit thicker prevents them from breaking down too much while cooking.

Slice the half onion into thick matchsticks, similar in thickness to the potatoes. The onion will add a natural sweetness to the broth.

Tear the oyster mushrooms into bite-sized pieces by hand. If using shiitake mushrooms, you can slice the caps. This adds a lovely chewy texture.

In a pot, combine the thickly cut potatoes and sliced onions. Pour in about 1.5L of water and bring to a boil over high heat. Let it simmer for about 10 minutes, or until the potatoes are partially cooked.

Once the soup starts boiling, add the prepared mushrooms. Continue to simmer for another 5 minutes.

Slice and add the cheongyang peppers for a spicy kick. Adjust the amount based on your preference for heat. You can also add a bit of red chili pepper for color and extra spice.
