- 300g Mussels
- 1/3 cup chopped green onions
- 1/3 cup chopped onion
- 1 tsp minced garlic
- 2 cups Tomato Spaghetti Sauce
- 1 tsp grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese (pizza cheese)
- 1 tsp dried parsley

Step 1
First, prepare the mussels. Gently pull the beard (byssus threads) from the mussels downwards and remove it. Scrub the shells under running water, rubbing the mussels against each other to remove any dirt or barnacles. Ensuring the mussels are clean is key to a delicious stew.

Next, prepare the aromatics. Finely chop or slice the green onions and onion. Mince the garlic. Uniformly chopped vegetables will meld beautifully into the sauce.
