A Unique Burger Made Without Buns, Featuring Crispy Potato Rösti
Introducing my special ‘Rösti Burger,’ a convenient and delightful burger you can make at home when you’re out of hamburger buns or want to avoid bread. Rösti is a quintessential Swiss comfort food, made by pan-frying thinly sliced or grated potatoes into a golden, crispy patty. Its texture is wonderfully similar to Korean savory pancakes, making it a beloved dish. This recipe presents my unique Rösti Burger, which is more delicious and healthier than traditional burgers, using crispy potato rösti instead of buns.
Burger Ingredients- 2 medium potatoes
- 1 tsp flour (for binding)
- 1 tsp mozzarella or cheddar cheese (optional, for added flavor)
- 30g cherry tomatoes (about 2-3)
- 10g chicory (or other leafy greens)
- 1 slice processed cheese
- 1 large egg
- Pinch of salt
- Pinch of black pepper
- 1/2 Tbsp canola oil (or vegetable oil)
- 40g bell pepper (red or orange recommended)

- 10g carrot (finely minced)

- 1 tsp cooking wine (like mirin)

Cooking Instructions
Step 1
First, let’s prepare the ingredients for the burger patty, the heart of our Rösti Burger. Measure out the ground beef, finely minced onion and carrot, minced garlic, flour, half an egg, cooking wine, salt, and pepper.
Step 2
In a bowl, combine all the patty ingredients and mix them thoroughly by hand until the mixture becomes cohesive and slightly sticky. Shape the mixture into round, flat patties. It’s important to mince the onion and carrot very finely to prevent the vegetables from falling out or the patty from breaking apart during cooking. Once shaped, refrigerate the patties for 10-20 minutes to firm them up, which makes them easier to handle.
Step 3
Heat a frying pan over medium-low heat and cook the patties until golden brown on both sides. When the patties are about halfway cooked, carefully add about 1-2 tablespoons of water to one side of the pan and immediately cover it with a lid. This steaming process helps cook the patties through gently without burning, ensuring they remain tender and moist inside.
Step 4
Now, it’s time to make the rösti, which will serve as the ‘buns’ for our burger. Peel the potatoes and slice them as thinly as possible. Using a mandoline slicer will give you consistent, thin slices, which is ideal for achieving a crispy texture. If using a knife, aim for paper-thin slices.
Step 5
In a bowl, combine the thinly sliced potatoes with the mozzarella or cheddar cheese (if using), salt, pepper, and flour. Mix everything gently until well combined. Do not rinse the shredded potatoes with water; the starch naturally present in the potatoes will help bind the mixture together as it cooks, maintaining the shape of the rösti.

Heat about half a tablespoon of canola oil in a frying pan over medium-low heat. Spoon the potato mixture into the pan, shaping it into round patties that are roughly the size of your burger buns. Let one side cook until it’s deeply golden and crispy before attempting to flip it. Flipping carefully is key to preventing the rösti from falling apart. Cook until both sides are golden brown and delightfully crisp.
Step 7
Prepare the fresh vegetables and toppings for your burger. Halve the cherry tomatoes, wash and pat dry the chicory (or your chosen greens), and have the slice of cheese ready.
Step 8
Carefully crack the egg into a separate pan and fry it to your desired doneness, aiming for somewhere between a runny yolk and fully cooked. Adjust the cooking time based on whether you prefer a soft or firm yolk.
Step 9
Now, let’s assemble the burger! Place one crispy rösti disc on a plate. Layer it with thinly sliced bell peppers, the cooked beef patty, a slice of cheese, the fried egg, halved cherry tomatoes, and a generous portion of chicory. Top it all off with the second rösti disc to complete your magnificent Rösti Burger.

Cut the completed Rösti Burger in half and enjoy it with your hands! It holds together well, making it easy to eat.
