  • Black bean paste 1.5 Tbsp
  • Brown sugar 0.5 Tbsp
  • Minced garlic 1 Tbsp
  • Cooking wine (Mirin/Soju) 2 Tbsp
  • Onion juice 3/4 cup (approx. 180ml)
  • Ginger wine 2 Tbsp
  • Plum extract (Maesilcheong) 1 Tbsp
  • Oligosaccharide 1 Tbsp
  • Black pepper a pinch

Instant Scallion Salad Dressing

  • Anchovy sauce (Myeolchi Aekjeot) 1.5 Tbsp
  • Red pepper flakes 2 Tbsp
  • Plum extract (Maesilcheong) 1 Tbsp
  • Salt 1 tsp
  • Onion juice 3 Tbsp
  • Dried anchovy powder 0.5 Tbsp
  • Sesame oil a little
  • Sesame seeds a little

Cooking Instructions

First, prepare all the ingredients needed for the recipe. Have your fresh pork belly and scallions ready, and measuring out the marinade ingredients will make cooking much smoother.

Prepare half an onion and chop it roughly. Place the chopped onion and 1/2 cup (approx. 120ml) of water into a blender and blend until smooth to make fresh onion juice. This onion juice will add tenderness and flavor to the pork belly marinade.

Place the pork belly in a bowl. Add 1.5 tablespoons of black bean paste from the pork marinade ingredients. The black bean paste is the key ingredient that will provide a deep, savory flavor to the pork belly.

To the bowl with the pork belly, add the remaining pork marinade ingredients: 0.5 Tbsp brown sugar, 1 Tbsp minced garlic, 2 Tbsp cooking wine, 3/4 cup of the prepared onion juice, 2 Tbsp ginger wine, 1 Tbsp plum extract, 1 Tbsp oligosaccharide, and a pinch of black pepper.
