Main Ingredients

  • 1 block Tofu (approx. 300g)
  • 100g Spam (half of a small can)
  • 2 Eggs
  • 1/2 Onion
  • 1 stalk Green Onion

Sauce

  • 1 Tbsp Oyster Sauce
  • 1 Tbsp Soy Sauce
  • 1/2 Tbsp Sugar
  • 1/2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds
  • 50ml Water
  • Pinch of Black Pepper

Cooking Instructions

First, cut the tofu into bite-sized cubes, about 2cm each. Place the cubed tofu in a large bowl.

Crack the 2 eggs into a separate bowl and whisk them well.

Pour the whisked eggs over the tofu in the bowl. Gently shake the bowl to coat the tofu evenly with the egg mixture, being careful not to break the tofu pieces.

Peel the onion, rinse it, and finely chop it into small pieces (about 5mm). Slice the green onion, separating the white and green parts.

Open the Spam can and remove the contents. To reduce its saltiness and greasiness, briefly dip the Spam in boiling water for about 30 seconds, then remove it immediately.

After draining the Spam, use the back of a knife (knife’s dull side) to mash it. If you prefer a chewier texture, you can also chop it into small pieces.

Heat a generous amount of cooking oil in a pan over medium-high heat. Add the egg-coated tofu and fry it until golden brown on both sides, flipping as needed. It should be crispy on the outside and tender on the inside.

Add a little more oil to the same pan. Add the chopped onion and the white parts of the green onion, and stir-fry over medium heat for 1 minute until fragrant.

Add the mashed Spam to the pan and stir-fry with the onion and green onion for another minute over medium heat, allowing the ingredients to meld together.

Once the onion starts to turn translucent, create a space in the center of the pan.

In the cleared space, add 1 Tbsp oyster sauce, 1 Tbsp soy sauce, 1/2 Tbsp sugar, 1/2 Tbsp gochujang, and a pinch of black pepper.

Stir-fry the sauce ingredients for about 30 seconds to create a flavorful base, being careful not to burn them.

Combine the fried onion, green onion, and Spam with the sauce in the pan, and stir-fry everything together so the flavors coat the ingredients.
