Seasoning Sauce- 3 Tbsp Gochugaru (Korean chili flakes – adjust to spice preference)

- 1 Tbsp Minced Garlic
- A pinch of Black Pepper
- 1 Tbsp Sugar
- 2 Tbsp Corn Syrup (for shine and sweetness)
- 3 Tbsp Gochugaru (Korean chili flakes – adjust to spice preference)
- 2 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced Garlic
- A pinch of Black Pepper
- 1 Tbsp Sugar
- 2 Tbsp Corn Syrup (for shine and sweetness)
Cooking Instructions
Step 1
First, slice the Richem (or your chosen canned ham) into bite-sized pieces. Slicing them not too thinly will provide a better texture.
Step 2
Rinse the tteokguk tteok (rice cakes) under cold water. If the rice cakes are hard, soaking them in water for a bit will make them softer and chewier.
Step 3
Peel and slice the onion into medium-sized squares. This will help release its sweetness when stir-fried.
Step 4
Cut the cabbage into large square pieces as well. The sweetness and crispiness of the cabbage will enhance the flavor of the stir-fry.
Step 5
Wash and peel the green onion, then slice it diagonally. This will be added at the end for a fragrant aroma.
Step 6
In a bowl, combine 3 Tbsp gochugaru, 2 Tbsp gochujang, 1 Tbsp minced garlic, a pinch of black pepper, 1 Tbsp sugar, and 2 Tbsp corn syrup. Mix well to create a delicious seasoning sauce. Ensure there are no lumps by stirring thoroughly.
Step 7
Heat 2 Tbsp of cooking oil in a frying pan over medium heat. Add the sliced onion and cabbage and stir-fry until they become translucent and slightly softened. You’ll notice a fragrant aroma from the vegetables.
Step 8
Once the vegetables are lightly stir-fried, pour in 100ml of water. Add the prepared tteokguk tteok, sliced Richem, and diagonally sliced green onion. Increase the heat to high and bring to a boil.
Step 9
As soon as the mixture starts boiling, add all of the prepared seasoning sauce. Stir-fry quickly to ensure the ingredients are well coated with the sauce. Continue stir-frying for about 2-3 minutes, being careful not to burn it.
Step 10
Finally, drizzle in 1 Tbsp of sesame oil for added flavor. Give it one last gentle mix, and your delicious Richem Budae-Bokkeum is ready to be enjoyed! Serve hot.
