This recipe is so simple, even beginners or those living alone can easily make it with just one pan! It’s a chicken mayo and spam mayo bowl that’s incredibly easy to prepare and guaranteed to be a hit. The ingredients are minimal, and the cooking process is straightforward. I personally love finishing this entire dish using just one wok. It’s a perfect one-bowl meal and a one-pan wonder!
Main Ingredients- 1 can Spam (115g)
- Leftover cooked chicken (shredded)
- 4 Eggs
- 3/4 Onion
- Soy sauce
- Water
- Mayonnaise
Cooking Instructions
Step 1
First, shred the leftover cooked chicken into bite-sized pieces using chopsticks or your fingers. Dice the Spam into roughly 1cm cubes. Cutting them into bite-sized pieces makes them easier to cook and eat.
Step 2
Peel the onion and thinly slice it into julienne strips. Slicing them thinly will help them absorb the sauce better and result in a softer texture.
Step 3
Crack the 4 eggs into a bowl. Whisk them gently, without adding any salt, and break up the egg whites. Since the onion will be seasoned with soy sauce later, it’s best to keep the scrambled eggs plain. This ensures the overall seasoning is perfectly balanced when mixed with rice.
Step 4
Now, lightly grease the pan with cooking oil and add the diced Spam. Cook over medium heat until the Spam is golden brown and slightly crispy on all sides. The delicious Spam fat will render out, adding wonderful flavor.
Step 5
Without removing the Spam, pour the whisked egg mixture into the same pan to make scrambled eggs. Continuously stir with chopsticks to create soft, fluffy scrambled eggs. Remember, since the onion will be seasoned later, it’s important not to add any salt to the eggs at this stage. This step is crucial for achieving a perfect flavor balance when everything is combined with rice.
Step 6
Transfer the cooked Spam and the scrambled eggs to a separate bowl for now. Then, wipe the pan clean with a paper towel to remove excess oil, preparing it for the next step.
Step 7
It’s time to make the soy-glazed onions. Add all the thinly sliced onions to the pan. Pour in enough water to just cover the onions. Add 3 tablespoons of soy sauce and 2 tablespoons of sugar. Bring to a simmer over medium-low heat. (While traditional Japanese recipes might use mirin or tsuyu, this recipe uses regular soy sauce and sugar.) Before it simmers, taste the broth and adjust the soy sauce or sugar to your preference to create your perfect balance.
Step 8
Simmer the onions until they become translucent, soft, and have absorbed the rich soy sauce color. The sweetness of the onions will meld beautifully with the savory soy sauce, creating a delicious glaze. This step is halfway to completion!
Step 9
Fill a bowl with a generous portion of warm white rice. Drizzle the delicious soy-glazed onions, along with their sauce, all over the rice. Make sure to cover the rice generously so the flavors seep in.
Step 10
You’re almost there! Arrange the fluffy scrambled eggs attractively around the edges of the bowl. Top the glazed onions with the nicely browned Spam and the shredded chicken.
