Spam Kimchi Stew
Deliciously Spicy and Savory Spam Kimchi Stew: The Ultimate Recipe!
Hello everyone! It’s surprisingly not as cold as I expected, with lovely sunshine today. I even went out to the yard yesterday to harvest some shepherd’s purse and thin out spinach, enjoying the warm weather. It’s a relief that this winter isn’t too harsh! This morning, I made a hearty pot of Spam Kimchi Stew and devoured a bowl of rice with it. It’s been a while since I added Spam, and picking out the pieces was quite enjoyable! Ideally, it’s best with aged kimchi, but since I didn’t have any, I used some of my freshly made kimchi that had ripened a bit. Let’s get cooking!
Main Ingredients
- Napa Kimchi (fermented) 1/4 head
- Spam 200g can, 1
- Kimchi brine 1 cup
Seasoning & Broth
- Gochugaru (Korean chili powder) 1 Tbsp
- Vinegar 1 Tbsp
- Sugar 1 Tbsp
- Broth 2 cups (Anchovy-kelp broth or rice water recommended)
- Natural seasoning powder 1 Tbsp (optional)

Cooking Instructions
Step 1
Prepare 1/4 head of fermented Napa kimchi. If the kimchi head is very large, use a portion of it. Cut the kimchi into bite-sized pieces.
Step 2
Open the Spam can and slice it into pieces similar in size to the kimchi, or into bite-sized cubes. As it cooks, the fat from the Spam will render into the stew, adding a richer flavor.
Step 3
Place the cut kimchi and Spam into a pot. Add 1 Tbsp of gochugaru and mix well. Marinating the ingredients beforehand helps the seasoning penetrate the kimchi, resulting in a more delicious stew.
Step 4
Pour in 1 cup of the reserved kimchi brine and 2 cups of broth. Using anchovy-kelp broth or rice water for the broth will enhance the savory notes. (Optionally, add 1 Tbsp of natural seasoning powder to further enrich the flavor.)
Step 5
Place the pot over high heat and bring it to a rolling boil. Once boiling, reduce the heat to medium and simmer for about 10-15 minutes, allowing the kimchi and Spam to soften and the flavors to meld beautifully.
