We usually enjoy Spam Kimchi Fried Rice as just fried rice, but this time, we made a generous portion to serve as a rice bowl. Topped over rice and mixed together, it creates a truly hearty and delicious meal. Shall we make this simple yet wonderful Spam Kimchi Fried Rice Bowl together?
Main Ingredients- 1/4 head of well-fermented Napa cabbage kimchi
- 1 can (large) Spam
- 1/2 bunch of green onions or scallions
Seasonings & Others- 1 Tbsp oyster sauce
- 2 Tbsp sugar
- 1/2 cup water (or kelp broth)
- 1 Tbsp perilla oil (or sesame oil)
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
First, prepare well-fermented Napa cabbage kimchi that has a rich flavor. Finely chop the kimchi; this helps the sauce penetrate better and results in a softer texture when stir-fried.
Step 2
Dice the Spam (or similar canned ham) into small cubes, similar in size to the chopped kimchi. Dicing it small makes it easier to eat with rice and allows its savory flavor to spread throughout the dish when stir-fried.
Step 3
If you have green onions or scallions, chop them finely. You can use regular onions too, but green onions or scallions add a beautiful color and a fragrant touch. (Optional)
Step 4
Heat a pan over medium heat, add 1 Tbsp of perilla oil (or sesame oil), then add the chopped kimchi and diced Spam. Stir-fry until fragrant. The tartness of the kimchi will lessen, and it will become savory as it mingles with the Spam’s fat.
Step 5
Add 1 Tbsp of oyster sauce and 2 Tbsp of sugar to the stir-fried ingredients and mix well. Oyster sauce adds umami, and sugar balances the kimchi’s sourness, creating an overall harmonious flavor.
Step 6
Now, it’s time to create a sauce base for the rice bowl, rather than just a stir-fry. Pour in 1/2 cup of water (or anchovy-kelp broth). A little liquid is desirable for a moist and delicious experience when mixed with rice. If you prefer a drier texture or want it more like fried rice, you can omit this step.
Step 7
Bring everything to a simmer over medium-low heat for about 5 minutes, allowing the flavors to meld and the ingredients to soften. Finally, add the chopped green onions for a burst of freshness.
Step 8
Continue to cook for another minute after adding the green onions. Turn off the heat and sprinkle 1 Tbsp of toasted sesame seeds to finish. Spoon generously over a bowl of hot rice and mix well – it’s absolutely delicious!
