Ingredients

  • 3 ripe tomatoes
  • 1 pack tomato sauce (about 200-250g)
  • 1 Tbsp minced garlic
  • 1/2 medium onion, chopped
  • 4-5 black olives, sliced or whole
  • 2 large eggs
  • 1 pack bacon, chopped (about 100g)
  • 1 can SPAM, diced (about 200g)
  • 1.5 cups shredded mozzarella cheese (about 75g)
  • 3 slices of bread
  • 1 Tbsp butter
  • Cooking oil, as needed

Cooking Instructions

Step 1

First, prepare the bread for serving. Spread butter evenly on both sides of the bread slices and toast them until golden brown in a pan or air fryer. Let them cool slightly.

To achieve a smoother texture, we’ll blanch the tomatoes. Score the bottom of each tomato with a small ‘X’, then immerse them in boiling water for about 30-60 seconds until the skins start to peel. Immediately transfer them to an ice bath to stop the cooking. Peel off the skins and place the tomatoes in a blender. Blend until smooth.

Prepare the main ingredients for the dish. Dice the SPAM into roughly 1cm cubes and chop the bacon into bite-sized pieces. Chop the onion coarsely.

Mince the fresh garlic. This aromatic base is key to the dish’s flavor.

Preheat a skillet over medium heat. It’s important not to overheat the pan; a gentle, even heat is ideal.

Add a swirl of cooking oil to the preheated pan, ensuring the bottom is lightly coated to prevent sticking.

Once the pan is warm, add the minced garlic and sauté over low heat until fragrant. Be careful not to burn the garlic.
