Cooking Instructions
Step 1
Here are the ingredients prepared for making the Spam, Avocado Guacamole, and Egg Rice Bowl.
Step 2
Dice the avocados into roughly 1.5cm cubes. If your avocados are not yet ripe, leave them at room temperature for 2-3 days. They are perfect for cooking when the skin turns a dark brown and the flesh yields slightly to gentle pressure.
Step 3
Finely mince half an onion. This minced onion will add a wonderful depth of flavor to the guacamole.
Step 4
In a bowl, combine the diced avocados and minced onion. Add the honey, salt, and lemon juice designated for the guacamole. Gently mix everything together to create the guacamole, being careful not to mash the avocado too much.
Step 5
Cut the Spam into approximately 1cm cubes. Heat a pan over medium-low heat without any oil, and stir-fry the Spam until it starts to turn golden brown. Then, add 1 tablespoon of sugar and continue to cook until the Spam is nicely browned and has a sweet and salty glaze.
Step 6
In a separate bowl, whisk together the 2 eggs with 1 tablespoon of milk, 1 tablespoon of cooking wine, and a pinch of salt. Heat 1 tablespoon of sesame oil in a non-stick skillet over low heat. Pour in the whisked egg mixture and cook to make scrambled eggs. For extra soft and creamy scrambled eggs, remove the pan from the heat when the eggs are about 70% cooked and continue to stir gently as they finish cooking from the residual heat.
Step 7
Slice the remaining 1 and a half onions in half and then thinly slice them into strips. These will become wonderfully sweet when sautéed.
Step 8
Heat the remaining 1 tablespoon of sesame oil in a pan over medium heat. Add the sliced onions and 1 tablespoon of oyster sauce. Sauté the onions until they become translucent and tender. The oyster sauce will enhance their natural sweetness.
Step 9
Now it’s time to assemble our delicious rice bowl! We have our fresh avocado guacamole, sweet sautéed onions, soft scrambled eggs, and savory fried Spam ready to be layered.
Step 10
Place one bowl of warm cooked rice into your serving dish.
Step 11
Spread the sweet sautéed onions evenly over the rice. Their sweetness will complement the rice beautifully.
Step 12
Finally, generously top the rice with the scrambled eggs, fresh avocado guacamole, and the perfectly cooked Spam. This visually stunning ‘three-color’ rice bowl offers a delightful combination of tastes and textures, and its beautiful presentation makes it a fantastic option for a special meal or a charming lunchbox!
