Create a simple yet delicious pancake dish using leftover Spam and tofu from your fridge! These Spam and Tofu Pancakes are crispy on the outside and tender on the inside, making them a perfect snack for kids or a satisfying side dish. Adding chili peppers for a touch of spiciness elevates them to a gourmet treat that adults will love too. Here’s a detailed recipe that anyone can easily follow!
Main Ingredients- 200g Spam
- 1 block Tofu (approx. 300g)
- 2 Eggs
- 1.5 cups Pancake Mix (standard paper cup, approx. 150g)
- 1 Red Bell Pepper
- 1 Korean Chili Pepper (optional)
- Pinch of Black Pepper
Cooking Instructions
Step 1
Drain the tofu thoroughly by wrapping it in cheesecloth or paper towels and pressing out as much water as possible. Mash the tofu. Slice the Spam into bite-sized pieces (about 0.5cm thick). Alternatively, you can mash the Spam directly from the can before slicing.
Step 2
Remove the seeds from the red bell pepper and Korean chili pepper, then finely mince them. If you enjoy spicy food, adjust the amount of Korean chili pepper, or omit it if you prefer milder flavors.
Step 3
In a large bowl, combine the mashed tofu, sliced Spam, minced peppers, 2 eggs, 1.5 cups of pancake mix, and a pinch of black pepper. Mix everything well until a cohesive batter forms. The consistency should be slightly thick, not too runny. If the batter is too thin, add a little more pancake mix. If it’s too stiff, add about half an egg more to achieve the desired consistency.
Step 4
Heat a frying pan over medium heat and add a generous amount of cooking oil. Drop spoonfuls of the batter onto the pan, shaping them into small, flat circles. Avoid overcrowding the pan to make flipping easier.
Step 5
Cook each side for about 3-4 minutes until golden brown and crispy. Ensure the pancakes are cooked through, with the Spam and tofu well integrated. Add a little more oil if the pan becomes dry during cooking.
Step 6
Once both sides are golden and crisp, they are ready to serve! They taste best when warm. For an enhanced flavor experience, serve with a dipping sauce made from soy sauce, vinegar, and wasabi, according to your preference.
