- 1/2 medium onion
- 1 red chili pepper
- 1 green chili pepper (optional, for extra heat)
- 1L water (about 4 cups)
Seasoning for Flavor- 2 Tbsp sesame oil (perilla oil preferred)
- 1 Tbsp sugar (balances the kimchi’s sourness)
- 2 ladles kimchi brine (about 100ml)
- 1 Tbsp anchovy sauce or fish sauce
- 1 Tbsp soy sauce for soup (Guk-ganjang)
- 1 Tbsp minced garlic
- 2 Tbsp sesame oil (perilla oil preferred)
- 1 Tbsp sugar (balances the kimchi’s sourness)
- 2 ladles kimchi brine (about 100ml)
- 1 Tbsp anchovy sauce or fish sauce
- 1 Tbsp soy sauce for soup (Guk-ganjang)

Step 1
Prepare the vegetables for the stew. Slice the green onion, red chili, and green chili peppers diagonally about 0.5cm thick. Slice the onion into strips about 0.5cm thick. This preparation allows the flavors to meld beautifully into the broth.

Cut the Spam and Vienna sausages into bite-sized pieces. For the Spam, slice it about 0.7cm thick. For the Vienna sausages, you can score them or cut them in half. This ensures they cook evenly and look appealing.
