Hello everyone! Today, we’re making a wonderful side dish using Spam from holiday gifts and potatoes from the pantry. The fantastic combination of tender potatoes that don’t crumble easily and savory Spam! With the added colors from carrots and bell peppers, this Spam and Potato Stir-fry is perfect as a side dish for kids or even as a snack with drinks for adults. One taste and you’ll finish a whole bowl of rice in no time!
Main Ingredients- 6 potatoes (medium-sized)
- 1 Tbsp coarse salt (for blanching potatoes)
- 2 small cans Spam
- 1/2 carrot
- 1 red bell pepper
- 1 yellow bell pepper
- Generous amount of cooking oil (approx. 5-6 Tbsp)
Seasoning- 1/2 tsp salt (for seasoning)
- Pinch of black pepper (to taste)

Cooking Instructions
Step 1
First, peel the potatoes thoroughly and then cut them into fine julienne strips about 0.5 cm thick. It’s important to maintain a moderate thickness, as they can crumble if cut too thinly during stir-frying.
Step 2
Julienne the carrot and bell peppers slightly thinner than the potatoes. Cutting them this way will result in a more harmonious and visually appealing texture when cooked.
Step 3
Fill a pot with plenty of water and bring it to a boil. Add 1 Tbsp of coarse salt, then add the julienned potatoes and blanch them for about 1 minute. This step helps the potatoes stay tender and prevents them from breaking apart during stir-frying.
Step 4
After blanching, don’t immediately rinse the potatoes with cold water. Instead, drain them in a colander and let the water naturally evaporate. If there’s too much moisture, oil can splatter excessively when stir-frying.
Step 5
Open the Spam cans and briefly rinse them under hot water. This helps remove the characteristic saltiness and any impurities from the Spam, making it taste cleaner.
Step 6
Once the Spam is drained, cut it into julienne strips of similar thickness to the potatoes for easy eating.
Step 7
Heat a wide pan over medium heat and add a generous amount of cooking oil. First, add the harder vegetables, carrots and bell peppers, and stir-fry for about 1-2 minutes until they soften slightly. Stir-frying until they become slightly tender is ideal.
Step 8
Now, add the drained potatoes and 1/2 tsp of salt to season. Stir-fry, ensuring the potatoes are coated with oil, for about 3-4 minutes. This process will help the potatoes cook evenly and retain their shape without crumbling, while also giving them a nice sheen.
Step 9
Once the potatoes are somewhat cooked, add the julienned Spam and a pinch of black pepper to your liking. Continue to stir-fry together for another 1-2 minutes until the Spam is lightly browned.
Step 10
Gently toss everything together until well combined to complete the delicious Spam and Potato Stir-fry! It’s great served hot, or you can let it cool and pack it as a lunchbox side dish.
