  • 5 large eggs
  • 200g Spam (about half a standard can)

Crack 5 large eggs into a bowl. Add two pinches of salt. Whisk the eggs thoroughly with a fork or whisk until the yolks and whites are well combined and slightly frothy. Cut the Spam in half lengthwise. You can also slice it thinly if preferred.

Heat a non-stick frying pan over medium-low heat. Place the cut Spam pieces in the pan and pan-fry them until golden brown and slightly crispy on both sides. This step renders some of the fat and enhances the Spam’s savory flavor.

Wipe the pan clean and heat it again over medium-low heat. Add about 1-2 tablespoons of cooking oil and spread it evenly. Once the pan is warm, pour about half of the beaten egg mixture thinly to form a round shape. As the egg starts to set around the edges, place two pieces of the pan-fried Spam onto the egg layer, near one edge.

Using your spatula, gently lift the edge of the egg with the Spam and begin to roll it towards the opposite side. Roll it up snugly. Once rolled, push the egg roll to the side of the pan. Pour the remaining beaten egg mixture into the empty space in the pan, allowing it to flow slightly underneath the rolled egg. This ensures the layers will adhere well.
