Delicious and Flavorful Chive Pancake with Spam
Introducing a delightful chive pancake recipe featuring Spam, an excellent pantry staple! Spam, when mashed finely with a fork or the back of a knife, adds a wonderful umami depth without the need for extra salt. Adding Spam to a vegetable-rich chive pancake makes it a hit even with kids, ensuring everyone in the family can enjoy this special treat. However, remember that delightful flavor combinations are always full of surprises!
Main Ingredients- Spam 100g
- 1 cup tempura flour (or all-purpose flour)
- 1.5 cups (1 and 1/2 cups) cold water
- 1 bunch chives (cut to 5-6cm length)
- 1/4 onion
- 10 perilla leaves
- 2 Korean green chilies (cheongyang peppers)
Cooking Instructions
Step 1
First, prepare the Spam. Place 100g of Spam in a bowl and finely mash it with a fork or the back of a knife until there are no large chunks. Mashing it this way helps it mix evenly into the pancake batter and infuses the pancake with its savory flavor, eliminating the need for extra salt.
Step 2
Next, let’s make the batter. Add 1 cup of tempura flour (or all-purpose flour) to a bowl. Pour in 1.5 cups (one and a half cups) of cold water. Using a whisk or chopsticks, mix the flour and water until smooth, ensuring there are no lumps. Using cold water helps to make the pancake extra crispy.
Step 3
Now, add the prepared chives to the batter. Wash one bunch of fresh chives thoroughly and cut them into 5-6 cm lengths. Add the cut chives to the batter and gently mix them in.
Step 4
Let’s add more vegetables for a richer flavor. Thinly slice 1/4 onion. Wash 10 perilla leaves, roll them up, and thinly slice them. If you like a bit of heat, remove the seeds from 2 Korean green chilies and slice them thinly on an angle. Add the sliced onion, perilla leaves, and green chilies to the batter along with the mashed Spam. Stir everything together well to create the complete pancake batter.
Step 5
Finally, it’s time to cook the pancake. Heat a frying pan over medium heat and add a generous amount of cooking oil. Use a ladle to spread the batter thinly onto the hot pan. Once the bottom side turns golden brown and crispy, carefully flip the pancake and cook the other side until it’s also golden brown. Cook thoroughly until both sides are a beautiful golden-brown color for a delicious Spam and chive pancake!
