Ingredients- 1 bowl of rice (warm rice recommended)
- 2 large eggs
- 1/2 green onion stalk
- 2 Tbsp soy sauce
- 4 Tbsp cooking oil (or butter)
- Pinch of black pepper
Cooking Instructions
Step 1
This recipe is for one serving. You can adjust the amount of eggs or rice to your liking, but remember to taste and adjust the seasoning, especially the soy sauce, to maintain the right balance.

Finely chop the green onion, including both the white and green parts. Finely chopped green onions will infuse the fried rice with great flavor and texture.

Heat 4 tablespoons of cooking oil in a pan over medium heat. Add the chopped green onions and sauté until fragrant, creating a delicious green onion oil. For an even richer flavor, you can add 1 tablespoon of butter along with the oil.

Once the green onions are fragrant, push them to one side of the pan. Pour the beaten eggs into the empty space and scramble them. When the eggs are about halfway cooked, stir them gently with chopsticks to mix with the green onions. After lightly stir-frying the green onions and eggs, create a small space on the side of the pan and pour in 2 tablespoons of soy sauce. Let it bubble and caramelize slightly for a moment before adding 1 bowl of warm rice.

Using a spatula, break up any clumps of rice and stir-fry everything together until the rice, green onions, eggs, and soy sauce are evenly combined. If using leftover cold rice, microwave it for 30 seconds to 1 minute before frying to prevent clumping and achieve a fluffy texture. Finish with a pinch of black pepper for added aroma.
Step 6
