Soft Walnut Chocolate Chip Cookies
Soft and Savory Homemade Walnut Chocolate Chip Cookies
After a period of rest, work has been quite tiring lately. Today, I was determined to bake cookies and took out the butter at lunchtime. Oh dear, there wasn’t even 200g! But I have cream cheese on hand! These walnut chocolate chip cookies use cream cheese as a substitute for some of the butter, resulting in a delightful texture and flavor. Enjoy the comforting taste of homemade goodness.
Ingredients for approximately 44 cookies- 165g Bread Flour
- 335g All-Purpose Flour
- 30g Cocoa Powder
- 10g Baking Powder
- 196g Butter, softened
- 164g Cream Cheese, softened
- 80g Sugar
- 2g Salt
- 2 large Eggs, room temperature
- 240g Honey
- 240g Chocolate Chips
- 100g Walnuts, toasted and chopped
Cooking Instructions
Step 1
Sift the bread flour, all-purpose flour, cocoa powder, and baking powder together three times. This thorough sifting helps to aerate the dry ingredients, leading to a lighter and more tender cookie texture.
Step 2
Toast the walnuts in an oven preheated to 150°C (300°F) for about 5-7 minutes until fragrant. Once cooled, chop them into small pieces (about the size of coarse breadcrumbs).
Step 3
In a large bowl, cream the softened butter using an electric mixer until it reaches a smooth, mayonnaise-like consistency. This step is crucial for creating a tender cookie crumb.
Step 4
Add the softened cream cheese in two or three additions, mixing well after each addition until fully incorporated with the butter. The cream cheese adds moisture and a subtle tang, complementing the richness of the butter.
Step 5
Gradually add the sugar and salt in two or three additions, continuing to mix. Beat until the mixture is light and fluffy and the sugar is mostly dissolved.
Step 6
Add the room temperature eggs one at a time, beating well after each addition until just combined. Be careful not to overmix at this stage to prevent the dough from becoming tough.
Step 7
Finally, incorporate the honey and mix until everything is just combined, creating a smooth base for your cookie dough. The honey will add a lovely depth of sweetness and flavor.
Step 8
Add the sifted dry ingredients to the wet ingredients. Using a spatula, gently fold them in until just combined. Be careful not to overmix; stop as soon as you no longer see streaks of flour. Overmixing can develop gluten, resulting in tough cookies.
Step 9
Gently fold in the chopped toasted walnuts until evenly distributed throughout the dough. The crunchy texture of the walnuts will be a wonderful contrast to the soft cookie.
Step 10
Add the chocolate chips and give the dough a final gentle mix to distribute them. This ensures you get bursts of chocolatey goodness in every bite.
Step 11
Line a baking sheet with parchment paper. Use a cookie scoop or two spoons to drop rounded portions of dough onto the prepared baking sheet, leaving ample space between each cookie to allow for spreading.
Step 12
Space the cookie dough portions generously on the baking sheet. Don’t worry if the shapes aren’t perfectly uniform – the rustic charm is part of the homemade appeal!
Step 13
Don’t fret about imperfect shapes! Homemade treats are perfect just the way they are. The focus is on the delicious taste and the love you put into them.
Step 14
Bake in a preheated oven at 180°C (350°F) for 12 minutes. Then, reduce the oven temperature to 170°C (340°F), rotate the baking sheets, and continue to bake for an additional 8 minutes per rotation, for a total of about 2-3 rotations. This ensures even baking and a tender interior. Baking times may vary depending on your oven.
Step 15
Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. This allows them to set slightly and become firm enough to transfer without breaking.
Step 16
Carefully transfer the cookies to a wire rack to cool completely. Cooling completely is essential for achieving the perfect crisp texture.
Step 17
Using cream cheese instead of the full amount of butter was a great decision! It made the cookies wonderfully moist and tender. I’m very pleased with the result.
Step 18
When you take your first bite, you’ll hear a satisfying ‘crunch’!
Step 19
As you chew, the cookie melts in your mouth with a soft, pillowy texture that is truly delightful.
Step 20
These are healthier cookies because they don’t leave a greasy residue on your hands or in your mouth. Enjoy them as a guilt-free treat!
Step 21
And there you have it – delicious, soft, and savory walnut chocolate chip cookies! Enjoy the wonderful aroma and savor this delightful homemade treat.
