If the vegetables don’t release much moisture, add a tiny bit of water and blend until smooth. Vegetables like carrots and spinach often have enough water to blend without added liquid. This puree will add a subtle color and natural sweetness to your bread.

Now, it’s time to make the bread batter. In a large bowl, add about 200g of pancake mix. Crack in 1 egg and pour in 150ml of milk. It’s important to get the batter consistency right, so you might need to adjust the amount of milk – aim for a fairly thick batter since the vegetable puree will add moisture. Add the prepared vegetable puree to the batter and mix gently until just combined. The batter with carrot puree will have a lovely orange hue. Ensure there are no lumps; mix until smooth.
