Soft Tofu and Rice Steamed Cake
Introducing ‘Dubu Al-seon’ (Steamed Tofu Cake) using Chamdream!
This recipe is an adaptation of steamed eggs, featuring rice, eggs, vegetables, and tofu. It’s a delightful and nutritious dish perfect for a meal or snack.
Main Ingredients- Cooked Rice: 80g
- Soft Tofu: 100g
- Red Bell Pepper: 20g
- Yellow Bell Pepper: 20g
- Eggs: 3
- Cooking Sake or Mirin: 1 Tbsp
- Scallions (chopped): 20g
- Salt: a pinch
Dipping Sauce- Soy Sauce: 1 Tbsp
- Vinegar: 1/2 tsp
- Scallions (chopped): a little
- Soy Sauce: 1 Tbsp
- Vinegar: 1/2 tsp
- Scallions (chopped): a little
Cooking Instructions
Step 1
Begin by preparing all your ingredients. Ensure the cooked rice is warm, and the tofu is well-drained. Wash the bell peppers and scallions thoroughly, remove seeds from the peppers, and finely chop them.
Step 2
Gently mash the tofu with a fork or your hands until it’s smooth and lump-free. Finely dice the red and yellow bell peppers and the scallions. Chopping the vegetables finely will improve the texture of the final dish.
Step 3
In a large bowl, crack the 3 eggs and whisk them well. Add the prepared rice, finely chopped bell peppers, and scallions to the bowl. Season with a pinch of salt and 1 tablespoon of cooking sake or mirin. Mix everything thoroughly until well combined. The sake or mirin will help to remove any eggy smell and add a pleasant aroma.
Step 4
Prepare a square, oven-safe mold or dish. Line the inside of the mold with aluminum foil. This will make it easier to remove the steamed cake later and simplify cleanup. Carefully pour the egg, rice, and vegetable mixture into the foil-lined mold, spreading it evenly.
Step 5
Place the mold in a steamer basket over simmering water. Cover and steam for about 15 minutes. To check for doneness, insert a skewer or toothpick; it should come out clean. Be careful not to over-steam, as it can become dry and crumbly.
Step 6
Once steamed, carefully remove the mold from the steamer and let it cool slightly. Allowing it to cool a bit will help the steamed cake firm up, making it easier to slice without breaking.
Step 7
After cooling, gently invert the mold to release the steamed tofu cake. Slice it into neat squares. Garnish the top with the chopped scallions for a touch of color and freshness. For the dipping sauce, mix 1 tablespoon of soy sauce, 1/2 teaspoon of vinegar, and a little chopped scallion. Serve the delicious and tender steamed tofu cake with the dipping sauce. Enjoy!
