This is a magical recipe that even kids who dislike tofu will devour, asking ‘What is this?!’ Tofu and eggs are blended and gently scrambled, making for a satisfying breakfast or a super quick and easy meal. Perfect for a healthy start to your day or a speedy snack.
Ingredients- 1/2 block firm tofu (approx. 150-200g)
- 2-3 stalks scallions
- 1/3 green bell pepper (seeds removed)
- 1/3 red bell pepper (seeds removed)
- 3 large eggs (room temperature)
- 1/2 tsp salt (or to taste)
- Pinch of black pepper
- 1 Tbsp cornstarch or potato starch
- 1 Tbsp butter
Cooking Instructions
Step 1
First, prepare half a block of tofu. Draining the tofu is crucial to prevent it from clumping and to ensure a tender scramble. Cut the tofu into bite-sized pieces or pieces suitable for mashing, then place it in a sieve to drain, or press it gently with paper towels.
Step 2
Wash and finely chop 2-3 stalks of scallions. Using both the green and white parts will add color and enhance the flavor.

Prepare about 1/3 each of a green bell pepper and a red bell pepper. Remove the seeds and finely dice them. Using a variety of colors can attract children’s interest and make the meal more visually appealing.

Crack 3 large eggs into a bowl. Using fresh eggs will result in a creamier and more delicious scramble.

Add the drained tofu to the bowl with the eggs. Use a fork or a mashing tool to crush the tofu until it’s smooth and lump-free, blending well with the eggs. Thorough mashing ensures the tofu integrates seamlessly.

Add 1/2 teaspoon of salt to season. If preparing for children, it’s best to start with less salt and adjust later according to taste.
