Introducing a recipe for ‘Mucheong Bokkeum’ (Stir-Fried Radish Greens) that adds flavor and nutrition by utilizing fresh spring radish leaves, harvested right after the radish is picked. This dish captures the unique tenderness and savory flavor of spring radish greens grown in Jeju, creating a healthy side dish that everyone can enjoy.
Main Ingredients- 2 bowls of dried radish greens (well-dried)
- 1 stalk of green onion
- 1 cup anchovy broth
Seasoning Ingredients- 1 Tbsp soy sauce
- 2 Tbsp avocado oil
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce

Cooking Instructions
Step 1
Rinse the radish greens thoroughly and dry them completely in a well-ventilated, shady spot. This drying method minimizes the loss of vitamin C contained in the greens. Natural sweetness and flavor will be concentrated during the drying process.
Step 2
Place the dried radish greens in a pot, add enough water to cover them, and boil for about 20 minutes. After boiling, rinse the greens in cold water to soften them, then soak them in cold water for about 1 hour. Since spring radish greens are tender, they don’t require prolonged soaking to become soft.
Step 3
In a bowl, combine the boiled and soaked radish greens with 1 Tbsp soy sauce, 2 Tbsp avocado oil, and 1 Tbsp minced garlic. Gently mix and knead them together so the seasoning is evenly distributed. (You can adjust the amount of soy sauce based on the saltiness of the greens.)
Step 4
Transfer the seasoned radish greens to a pan and add 1 cup of anchovy broth. Stir-fry over medium-low heat, allowing the greens to absorb the broth and cook until tender. Simmer until the liquid is reduced to a gravy-like consistency.
Step 5
Finally, add the diagonally sliced green onion and stir-fry for another moment to add aroma, completing your delicious stir-fried radish greens. Using avocado oil in the stir-fry makes the greens exceptionally tender and enhances their savory flavor.
