Ingredients- 70g dried fern shoots
- 1/3 cup green onion (finely chopped)
- 2 Tbsp perilla oil (deul-gireum)
- 1 Tbsp shiitake mushroom powder
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1/3 Tbsp sugar
- 1/4 cup water
- 1 red chili pepper (seeds removed and thinly sliced)
- 1/3 Tbsp minced garlic
Cooking Instructions
Step 1
First, heat 2 tablespoons of perilla oil in a pan over medium-low heat. Add the finely chopped green onion and sauté until fragrant and a flavorful green onion oil is created. This step builds a wonderful aromatic base.
Step 2
Once the green onion oil is ready, add the rehydrated and pre-boiled fern shoots. Gently stir-fry the ferns, ensuring they don’t break apart, to coat them well with the fragrant oil. Mix them in carefully.
Step 3
Now, it’s time to season. Add 1 tablespoon of shiitake mushroom powder, 2 tablespoons of soup soy sauce, and 1/3 tablespoon of sugar. Pour in 1/4 cup of water. Cover the pan with a lid and simmer over medium-low heat, allowing the ferns to absorb the flavors thoroughly. Stir occasionally to prevent sticking.
Step 4
When the fern shoots are tender and well-seasoned, add 1/3 tablespoon of minced garlic and the thinly sliced red chili pepper. Stir quickly to combine. The garlic adds depth of flavor, and the chili pepper provides a vibrant color contrast.
