Main Ingredients- 5 potatoes (ping pong ball size)
- 1 egg
- 1/4 green onion
For Sautéing Potatoes- 1 Tbsp perilla oil
Seasoning- 6 cups water
- 2 Tbsp soy sauce for soup
- 1 Tbsp anchovy sauce
- 1/2 Tbsp minced garlic
- 1 Tbsp perilla oil
Seasoning- 6 cups water
- 2 Tbsp soy sauce for soup
- 1 Tbsp anchovy sauce
- 1/2 Tbsp minced garlic
Cooking Instructions
Step 1
First, use a peeler to cleanly remove the skin from the 5 potatoes. If you’re cooking with children, this step can be a fun part of the process together.
Step 2
Slice the prepared potatoes thinly, about 0.2 cm thick, ensuring uniform pieces. Thinly sliced potatoes will cook tenderly in the soup and absorb the flavors beautifully.
Step 3
Finely chop the 1/4 green onion. This will add a fragrant aroma and a lovely color to the soup.
Step 4
In a clean bowl, crack 1 egg and whisk it thoroughly with a fork or whisk to break up the yolks and whites. Having the egg mixture ready will allow it to cook into soft ribbons in the soup.
Step 5
Now, place a pot over low heat and add 1 tablespoon of perilla oil. Add the thinly sliced potatoes and sauté for 2 minutes, coating them in the oil. The goal here isn’t to cook the potatoes through, but to infuse them with a nutty flavor and prepare them to meld with the broth. Be careful not to burn them.
Step 6
Pour 6 cups of water into the pot with the sautéed potatoes and turn the heat to high. Bring the soup to a rolling boil. While the soup heats up, finish preparing the remaining ingredients.
Step 7
Once the soup is boiling, add 2 tablespoons of soy sauce for soup and 1 tablespoon of anchovy sauce to enhance the umami and season the soup. Using anchovy sauce will give the broth a richer, deeper flavor.
Step 8
Add 1/2 tablespoon of minced garlic to the soup, allowing the garlic aroma to spread throughout. Garlic is a fundamental element in any soup!
Step 9
Give the seasoned soup a gentle stir to ensure the flavors are well combined.
Step 10
Slowly pour the whisked egg mixture in a circular motion around the edges of the pot. Pouring gently allows the egg to cook into delicate ribbons.
Step 11
Immediately after adding the egg, sprinkle the chopped green onions over the soup as a garnish. The fresh onion aroma will harmonize with the broth, making it even more delicious.
Step 12
Continue to simmer for about 2 more minutes after adding the egg until it is softly cooked. Your super simple Potato Egg Soup is now complete!
Step 13
Ladle generously into serving bowls. Enjoy this hearty and delicious meal, especially when served with rice!
