Simple One-Bowl Meal / Chinese-Style Egg Donburi at Home
Introducing a Japanese-style egg donburi recipe that looks unfamiliar but offers a familiar and captivating taste once you try it. The fluffy eggs and rich sauce combine to create a hearty and elegant meal.
Sauce- 200ml Water
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (Sweet Rice Wine)
- 1 Tbsp Sugar
- 1 Tbsp Vinegar
- 1/3 piece Chicken Stock Cube (or 1/3 Tbsp stock powder)
- 1 Tbsp Cornstarch

- 140g Imitation Crab Sticks (shredded)
- 1/3 stalk White part of Green Onion (finely chopped)

Cooking Instructions
Step 1
First, let’s make the delicious Tenshinhan sauce. In a pot, combine 200ml of water, 2 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp sugar, 1 Tbsp vinegar, and 1/3 of a chicken stock cube. Bring this mixture to a simmer over medium heat. If you don’t have a stock cube, 1/3 Tbsp of chicken stock powder can be used. Stir until all ingredients are well dissolved and the sauce begins to bubble.
Step 2
Once the sauce is boiling, prepare the cornstarch slurry. In a small bowl, mix 1 Tbsp of cornstarch with 1 Tbsp of cold water until smooth. Gradually pour this slurry into the boiling sauce while stirring continuously to prevent lumps. Continue to cook for about 1-2 minutes until the sauce thickens to your desired consistency. Your flavorful Tenshinhan sauce is now ready!
Step 3
Now, let’s prepare the soft, fluffy eggs. In a mixing bowl, crack 2 fresh eggs. Add the finely chopped white part of the green onion and the shredded imitation crab sticks. Whisk everything together until well combined. Ensuring the green onion and crab sticks are evenly distributed throughout the egg mixture is key for flavor and texture.
Step 4
Heat a non-stick pan over low heat and add a generous amount of vegetable oil. Pour the prepared egg mixture into the pan. Instead of making an omelet or scrambled eggs, gently stir the mixture with chopsticks or a spatula as if making soft scrambled eggs. Cook until the eggs are just set but still very soft and moist. This delicate cooking process is crucial for achieving the signature texture. There’s no need to flip the eggs.
Step 5
Place a bowl of warm rice onto your serving plate. Carefully slide the just-cooked soft egg mixture on top of the rice. Generously ladle the warm, thickened Tenshinhan sauce over the egg and rice. Allow the sauce to seep into the rice for maximum flavor infusion.
