Main Ingredients- 200g Dried Shredded Squid (Baek Jinmi-chae)
- 1 Tbsp Mayonnaise

- 1 Tbsp Cooking Oil
- 2 Tbsp Oligodang (corn syrup/isomers)
- 3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- 1/2 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Water
- 1 Tbsp Cooking Oil
- 2 Tbsp Oligodang (corn syrup/isomers)
- 3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- 1/2 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare 200g of dried shredded squid. Cut it into bite-sized pieces, about 4-5 cm long, for easy eating, especially for children. Instead of using scissors, it’s best to gently tear the squid along its natural grain with your hands. This method helps maintain a softer texture after cooking. Cutting with scissors can result in uneven lengths, making the finished dish look less tidy.
Step 2
Place the prepared dried shredded squid in a bowl. Add 1 tablespoon of mayonnaise. Rub the mayonnaise between your palms before coating the squid; this ensures the mayonnaise is evenly distributed without clumping.
Step 3
Gently mix the squid with the mayonnaise using your hands. This step evenly coats each strand of squid, adding moisture and contributing to a tender texture.
Step 4
Now, let’s make the flavorful sauce. In a small pot or pan, combine 1 tablespoon of sugar, 1 tablespoon of gochugaru, 1 tablespoon of water, 1 tablespoon of cooking oil, 2 tablespoons of oligodang, and the star ingredient, 3 tablespoons of gochujang. Cook over medium heat rather than high heat to ensure the sauce mixes well without burning.
Step 5
Once the sauce begins to boil, reduce the heat to very low and let it simmer for about 1 minute. Then, turn off the heat and allow the sauce to cool slightly. It’s important to let the sauce cool down a bit before adding it to the squid, as hot sauce can make the squid mushy.
Step 6
Once the sauce has cooled slightly, add it to the mayonnaise-coated dried shredded squid. Also, add 1 tablespoon of sesame oil and 1/2 tablespoon of toasted sesame seeds. Gently mix everything together with your hands until the squid is evenly coated with the sauce. Wearing food-safe gloves makes this mixing process much easier.
Step 7
After the squid is well-coated, it’s time for a quick stir-fry. Heat a pan over medium-low heat. Add the seasoned squid and stir-fry for just 1-2 minutes. Be careful not to overcook, as this can make the squid tough. The goal is to coat the squid evenly with the sauce and slightly toast it for enhanced flavor. This brief stir-fry adds a wonderful depth to the dish.
