[Kids’ Noodles] Simple Egg Noodles, Ready in 10 Minutes!
A simple and heartwarming egg noodle soup, perfect for children. Add a bit of kimchi on top as requested by my little one! This dish is a quick, satisfying, and comforting meal that will surely please your child’s palate.
Key Ingredients- 2 fresh eggs
- 1 handful of small dried anchovies (for broth)
- 1 piece of dried kelp (seaweed, about palm-sized)
- 1 serving of noodles (thin somen noodles or baby noodles)
- Chopped ripe kimchi (to taste)
Cooking Instructions
Step 1
Prepare the Broth: Pour 2 bowls (approx. 600ml) of water into a pot. Add the cleaned dried anchovies and the piece of kelp. Simmer over medium-low heat for about 10 minutes to extract the flavors. Remove the kelp as soon as the water starts boiling to prevent a bitter taste. Once the broth is flavorful, strain out all the solids to get a clear, delicious broth.
Step 2
Whisk the Eggs: Crack 2 fresh eggs into a bowl. Gently beat them with a fork or chopsticks until the yolks and whites are well combined. No need to whisk vigorously.
Step 3
Add the Egg Ribbons: While the broth is simmering, slowly drizzle the beaten eggs into the pot along the edges. As the egg begins to cook and form delicate ribbons, reduce the heat to low or turn it off completely. Be careful not to overcook the egg, keeping it tender. Season the broth with a pinch of salt to your liking.
Step 4
Cook the Noodles: In a separate pot of generously boiling water, add the noodles. Cook them according to the package directions or until they become tender and slightly translucent. If serving to a child, you might want to cook them a little softer than usual.
Step 5
Rinse the Noodles: Once cooked, drain the noodles in a colander. Rinse them thoroughly under cold running water to give them a pleasant chewy texture and remove any excess starch. Shake off excess water well.
Step 6
Assemble and Serve: Place the rinsed noodles into a serving bowl. Gently ladle the warm egg broth over the noodles. Top with a small amount of finely chopped ripe kimchi, if desired. Your simple and delicious egg noodle soup for kids (and adults!) is ready to be enjoyed!
