Nutrient-Rich Carrot Steamed Egg Custard Beneficial for Vision
As my eyesight has started to decline slightly, I’m making a steamed egg custard using carrots, which are known to be good for the eyes. It’s a simple yet satisfying dish that can serve as a light meal or a side dish.
Ingredients- A small amount of carrot (about 1/4 carrot, finely diced or thinly sliced)
- 2 eggs
- Plastic wrap (microwave-safe)
Cooking Instructions
Step 1
First, wash the carrot thoroughly. Then, finely dice it or slice it into thin strips. Dicing it smaller will help it cook faster and result in a softer texture.
Step 2
Crack the 2 eggs into a bowl. Remove the chalazae (the white stringy bits) and gently whisk them until just combined, avoiding excessive foam. A chopstick or fork works well for this.
Step 3
Add the prepped, finely chopped carrots to the whisked egg mixture and stir well to distribute them evenly. Ensure the carrots are mixed throughout the egg.
Step 4
Pour the egg and carrot mixture into a microwave-safe dish. Cover the dish tightly with plastic wrap, ensuring it seals the opening. It’s helpful if the wrap slightly drapes into the dish.
Step 5
Using a chopstick or toothpick, carefully poke several holes in the plastic wrap. This allows steam to escape during cooking, preventing bursting and ensuring even cooking.
Step 6
Steam the custard (or microwave it). If using a steamer, place the covered dish in the steamer basket over boiling water, cover with a lid, and steam over medium heat for about 5-8 minutes. If microwaving, cook on high for about 5 minutes at 700W, checking for doneness and adding more time if needed. The custard is done when a chopstick inserted comes out clean without any wet egg mixture.
Step 7
Once steamed to perfection, carefully remove the carrot steamed egg custard. Enjoy its soft and moist texture while warm! You can optionally add a drizzle of soy sauce or sesame oil to taste.
