  • 4 tsp Rice Syrup (Jocheong)
  • 4 Tbsp Soy Sauce
  • 1.5 Tbsp Sugar
  • 800ml Water
  • 1 tsp Sesame Oil
  • 0.5 Tbsp Toasted Sesame Seeds

First, the key to great braised beans is starting with clean ingredients. Before soaking, thoroughly rinse the Seoritae beans under running water. Remove any impurities you might find. Since we’ll be using the soaking water, it’s crucial to wash the beans very cleanly!

Add 800ml of water to the cleaned Seoritae beans and let them soak for at least 4 to 6 hours, or longer if needed. During colder weather, it’s best to soak them for a longer duration to ensure they plump up nicely. If the weather is warmer, you can reduce the soaking time.

In a pot, combine the soaked beans (along with their soaking water), rice syrup, and sugar. Cover the pot and bring it to a boil over high heat. Once it starts to bubble vigorously, reduce the heat to medium-low and let it simmer for about 30 minutes, covered, allowing the flavors to meld.

After simmering for about 30 minutes, the liquid should have reduced by about half, and the beans should look plump and well-infused with the initial seasonings. Now, add the soy sauce for a savory depth. Continue to simmer, uncovered, over medium-low heat until the sauce thickens further.

After adding the soy sauce and simmering for another 25 to 30 minutes, the sauce will be significantly reduced and have a sticky consistency. Taste it at this point. If you prefer it sweeter or saltier, I highly recommend adding a little more sugar, rice syrup, or soy sauce gradually until you achieve your desired balance of sweet and savory!

Finally, drizzle in the sesame oil for aroma and sprinkle with toasted sesame seeds for a nutty finish. Give it a gentle stir, then turn off the heat. Your delicious Seoritae braised black beans are now ready to be enjoyed! Serve them over warm, steamed rice for a perfect meal.
