Basic Ingredients

  • 100g melted butter
  • 60g sugar (can be increased by 10-30g for extra sweetness)
  • 2 room-temperature eggs
  • 100g cake rice flour (gluten-free)
  • 3g baking powder
  • 1g vanilla extract or lemon juice (approx. 1/4 tsp)

Cooking Instructions

First, in a bowl, combine the melted butter and sugar, mixing until the sugar is dissolved. Gradually add the room-temperature eggs, one at a time, whisking well after each addition to prevent separation. Stir in the vanilla extract or lemon juice until just combined. (If you prefer a sweeter cake, feel free to add an extra 10-30g of sugar.) In a separate bowl, sift the cake rice flour and baking powder together 2-3 times for a finer texture. Add the sifted dry ingredients to the wet ingredients. Using a spatula, gently fold the ingredients together until just combined and no dry flour streaks remain. Be careful not to overmix, as this can result in a dense cake.

Prepare your banana-shaped cake mold by greasing the inside thoroughly with butter. Then, lightly dust it with flour (or rice flour) and tap out any excess. This step ensures that the cake releases easily after baking.

Pour half of the batter into the prepared banana mold. Arrange thin banana slices on top of the batter. (Alternatively, you can use red bean paste or your favorite jam instead of banana slices. You can also bake the cake with just the batter for a simple treat.) Pour the remaining batter to fill the mold to about 80% full – overfilling can cause the cake to overflow during baking. Cover the filled mold with plastic wrap and let it rest in the refrigerator for 20 minutes. (If the weather is not too warm, you can leave it at room temperature.)
