- 4 tbsp tomato ketchup

- 1 tbsp oligosaccharide (or corn syrup)
- 6 tbsp water
- 1/2 tbsp minced garlic
- Pinch of black pepper
Cooking Instructions
Step 1
Wash and prepare all ingredients thoroughly. Drain the tofu well by placing it in a sieve. Separate the egg white from the yolk; you’ll only need the white for this recipe. (Save the yolk for another dish!)
Step 2
Finely mince the onion, scallions, and shiitake mushrooms. Mash the tofu using a fork or by hand. For best results, wrap the mashed tofu in cheesecloth or paper towels and gently squeeze out excess moisture – this helps the steak hold its shape better. For the sauce, in a small bowl, combine all ingredients except the minced garlic and pepper: tomato ketchup, Worcestershire sauce, oligosaccharide, and water. Mix well.
Step 3
In a large bowl, combine the drained mashed tofu, minced onion, scallions, shiitake mushrooms, the drained canned chicken breast, and the prepared egg white. Add 1/2 tsp of salt and mix everything together. Finally, add 1 heaping tbsp of pancake mix and 1 tbsp of minced garlic. Knead the mixture thoroughly until all ingredients are evenly incorporated and it forms a cohesive dough.
Step 4
To achieve a chewier texture, knead the tofu mixture vigorously. You can do this by tossing it in the air several times or by repeatedly pressing it down onto your work surface for about 5-7 repetitions, until it becomes sticky and pliable. Once the dough is ready, divide it into portions (about the size of a small fist) and flatten them with your palms, shaping them into round, flat steak patties.
Step 5
Heat a non-stick pan over medium-low heat. Add a little vegetable oil and 10g of butter. Once the butter melts, add 1 tbsp of minced garlic and sauté briefly until fragrant, being careful not to burn it. Once the garlic is aromatic, place the tofu patties into the pan.
Step 6
Pour the prepared sauce mixture (water, ketchup, Worcestershire sauce, oligosaccharide) around the edges of the pan while the patties are cooking. Bring the sauce to a gentle simmer, then reduce the heat slightly. Let the steaks simmer in the sauce for about 2-3 minutes, allowing them to absorb the flavors. Finish with a pinch of black pepper for added aroma.
Step 7
Prepare another pan by heating it over medium heat with a little vegetable oil. Carefully place the shaped tofu patties into the hot pan, ensuring they have enough space between them to cook evenly without sticking.
Step 8
Cook the tofu patties until golden brown on each side. Once one side is nicely browned, flip them over and cook the other side until equally golden. Gently turn the patties to ensure all sides, including the edges, are cooked and have a beautiful sear.
Step 9
Arrange the perfectly cooked tofu steaks on a serving plate. Generously spoon the warm, sweet and savory sauce over the steaks. Your delicious and healthy tofu steaks, perfect for a light meal or a home party, are now complete!
