Ingredients

  • 200g dried shredded squids (jinmi chae)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp water
  • 1 Tbsp soy sauce
  • 1 Tbsp plum extract (maesil cheong)
  • 2 Tbsp oligosaccharide
  • 1 Tbsp minced garlic
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

The first step to tenderizing the dried shredded squids! Prepare 200g of dried shredded squids. Place them in a bowl and soak in 2 Tbsp of lukewarm water for about 3 minutes to soften them slightly. Be careful not to soak them for too long, as this can make the texture mushy.

Making the delicious seasoning sauce! In a separate bowl, combine 1 Tbsp gochugaru, 2 Tbsp water, 1 Tbsp soy sauce, 1 Tbsp plum extract, 2 Tbsp oligosaccharide, 1 Tbsp minced garlic, and 2 Tbsp gochujang. Mix well with a spoon until thoroughly combined. Ensuring the sauce is well-mixed will help it coat the squids evenly.

Draining and preparing the squids! Now, take the soaked dried shredded squids out of the water and squeeze out as much moisture as possible with your hands. Then, cut them into bite-sized pieces (about 5-7cm) once or twice with scissors. This makes them easy for everyone to eat.

Toss with the sauce! Combine the squeezed dried shredded squids with the prepared seasoning sauce. Gently toss and mix with your hands until everything is well coated. Ensure the sauce is evenly distributed for the best flavor. If it seems too dry, you can add a little more sauce or adjust the seasonings to your taste.

Finishing touches & done! Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with toasted sesame seeds.
