  • 50g Minced Beef
  • 10g Carrot
  • 1 Shiitake Mushroom

Seasoning for Filling

  • 1/2 Tbsp Minced Garlic
  • 1/2 tsp Salt (adjust to taste)
  • 1 Tbsp Sesame Oil
  • 1 stalk Scallion, finely chopped
  • 1 Tbsp Starch (e.g., potato or corn starch)
  • Pinch of Black Pepper

Dipping Sauce (Cho-Ganjang)

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Vinegar
  • 1 tsp Sugar
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

Step 1

Wrap the block of tofu in a cheesecloth or paper towels and squeeze out as much water as possible. Pressing the tofu firmly will give it a firmer texture, making it easier to mash and ensuring it doesn’t become watery when steamed.

Step 1

Step 2

Finely chop 1 scallion. The mild pungency of the scallions will complement the delicate flavor of the tofu beautifully, adding an extra layer of aroma.

Step 2

Step 3

Peel and wash the 10g of carrot, then julienne it into thin strips, about 2cm long. Cutting the garnish vegetables thinly ensures they soften nicely during steaming and look visually appealing.

Step 3

Step 4

Trim the stem off the shiitake mushroom, wipe it clean, and julienne it to match the length of the carrots. The distinct umami of the shiitake will enrich the flavor of the Dubu Seon.

Step 4

Step 5

Finely mince 50g of beef. You can use pre-ground beef, but mincing it yourself will yield a better texture. Try to use lean cuts without sinew or excess fat for maximum tenderness.

Step 5

Step 6

In a large bowl, combine the squeezed and mashed tofu with the minced beef, minced garlic, salt (adjust to your preference), sesame oil, chopped scallions, and starch. Knead the mixture thoroughly with your hands until well combined and a slightly sticky texture forms. This step is crucial for holding the shape of the Dubu Seon after steaming.

Step 6

Step 7

Prepare your steamer by bringing water to a boil. Line the steamer basket with cheesecloth or parchment paper. Shape the tofu-beef mixture into flat, rectangular patties, about 1 to 1.5cm thick, and place them onto the lined steamer. Shaping them before steaming helps them maintain their form.

Step 7

Step 8

Arrange the julienned carrots and shiitake mushrooms decoratively on top of the shaped tofu patties as a garnish. The colorful toppings add visual appeal to the dish.

Step 8

Step 9

Cover the steamer with a lid, and steam over medium heat for about 10 minutes, or until the tofu and beef are fully cooked through. You can check for doneness by inserting a skewer; it should come out clean. Turn off the heat after 10 minutes.

Step 9

Step 10

While the Dubu Seon is steaming, prepare the dipping sauce. In a small bowl, whisk together 2 Tbsp soy sauce, 1 Tbsp vinegar, 1 tsp sugar, and 1 Tbsp toasted sesame seeds. The balance of sweet and tangy flavors enhances the mildness of the steamed tofu.

Step 10

Step 11

Carefully remove the steamed Dubu Seon from the steamer and place it on a cutting board. Let it cool slightly for a few minutes before slicing into bite-sized pieces (e.g., 2-3cm squares). Cutting while slightly cooled prevents the rolls from falling apart. Your soft, nutritious, and delicious ‘Dubu Seon’ is now ready!

Step 11

Step 12

Serve the Dubu Seon on a plate, drizzling the prepared Cho-Ganjang over it, or serve it on the side for dipping. This tender and satisfying steamed tofu dish is an excellent healthy option, especially for those mindful of their diet.
