The pudding in the photo was made using a 15cm cake pan, and it yields about 4 servings if made in individual ramekins (cocottes). Essential Ingredients
  • 4 fresh eggs
  • 60g to 80g granulated sugar (adjust to taste)
  • 550ml fresh milk
  • 2-3 drops vanilla extract

Cooking Instructions

Step 1

First, let’s prepare for making the pudding. If you are using a cake pan, lightly butter the inside to prevent the pudding from sticking. Preheat your oven to 160°C (320°F).

Step 2

Pour the milk into a saucepan and heat it until it’s just about to simmer, but not boiling (you’ll see small bubbles around the edges). This step is optional, but it helps create a smoother and more beautiful pudding texture and appearance.

Step 3

In a bowl, crack the 4 eggs and add the 60-80g of sugar. Gently whisk them together until well combined, taking care not to create too much foam. Stir until the sugar is dissolved.

Step 4

The milk should be heated just enough for small bubbles to form around the edges and for steam to rise. Be careful not to overheat it.

Step 5

Gradually pour the warm milk from step 3 into the egg and sugar mixture from step 2, stirring continuously to combine. Finally, add 2-3 drops of vanilla extract and give it a light stir. The vanilla extract helps to mask any eggy smell and enhances the overall flavor.

Step 6

Using a fine-mesh sieve (like a tea strainer or a chinois), slowly and gently pour the pudding mixture into your cake pan or individual ramekins (cocottes). Sieving the mixture ensures a very smooth and delicate surface for your pudding. Pour carefully to avoid creating air bubbles.

Step 7

Place your pudding containers in a larger oven-safe baking dish or tray. Pour hot water into this outer dish, creating a water bath (bain-marie). (See photo.) Baking the puddings in a water bath will ensure they cook gently and evenly, resulting in a moist and tender texture.

Step 8

Carefully place the tray with the water bath and pudding containers into the preheated oven set at 160°C (320°F). Bake for 50 to 60 minutes. The pudding is done when a skewer or knife inserted into the center comes out clean.
