Main Ingredients- 1 handful Dried Shredded Squid (Jinmi-chae, approx. 120g)
Seasoning Ingredients- 3 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 2 Tbsp Mayonnaise
- 1 Tbsp Minced Garlic
- 1 Tbsp Oligosaccharide (or corn syrup)
- 1 Tbsp Sesame Oil
- Pinch of Toasted Sesame Seeds
- 3 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 2 Tbsp Mayonnaise
- 1 Tbsp Minced Garlic
- 1 Tbsp Oligosaccharide (or corn syrup)
- 1 Tbsp Sesame Oil
- Pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
The type of Jinmi-chae I’m using today is ‘Cham Jinmi-chae’. While it’s thicker and chewier than regular Jinmi-chae, briefly soaking it before cooking transforms it into a delicious side dish. Enjoy the unique flavor of Cham Jinmi-chae.
Step 2
Prepare about one handful of Jinmi-chae, which is approximately 120g. This measurement is based on a standard Korean rice bowl spoon.
Step 3
Jinmi-chae strands are often tangled, so gently separate them first. Then, cut them into bite-sized pieces (about 5-7cm long). Cham Jinmi-chae is thicker than regular squid jerky, so cut it slightly smaller than usual for a pleasant chew.
Step 4
The secret to making Jinmi-chae wonderfully tender is to briefly blanch it in warm water. This prevents it from becoming hard not only right after cooking but also after refrigeration. Immerse the Jinmi-chae in warm water for about 2-3 minutes, then drain it thoroughly in a colander. Be careful not to soak it for too long, or it might become too soft and fall apart.
Step 5
Now, let’s make the delicious seasoning! In a bowl, combine 3 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp mayonnaise, 1 Tbsp minced garlic, 1 Tbsp oligosaccharide, and 1 Tbsp sesame oil. Mix them well. Mayonnaise is the secret ingredient that makes the Jinmi-chae extra soft and adds a rich, nutty flavor. If you’re in a hurry, you can mix it directly with the Jinmi-chae, but combining all the seasonings at once is often easier.
Step 6
Pour the mixed seasoning sauce into a frying pan and heat it over low heat. Wait until the sauce comes to a gentle simmer.

Once the sauce is simmering, add the drained Jinmi-chae. Using chopsticks, gently untangle the strands and coat them evenly with the sauce. Continue stir-frying until the sauce thickens slightly. Your delicious Jinmi-chae Bokkeum is ready!
