Ingredients- 350g dried shredded squid: Cut into bite-sized pieces.
- 2 Tbsp mayonnaise: The key ingredient for making the squid tender.
- 1 Tbsp sesame oil: Adds a nutty flavor.
- 1 tsp sesame seeds: Sprinkled on top for extra nuttiness and visual appeal.
- 2 tsp gochujang (Korean chili paste): Forms the base of the sweet and spicy flavor.
- 1 tsp gochugaru (Korean chili powder): Adds color and a mild heat.
- 2 tsp oligo당 (oligosaccharide syrup): For sweetness and gloss. (Corn syrup can be substituted).
- 1 tsp soy sauce: Adds umami depth.
Cooking Instructions
Step 1
Today, we’re making ‘Jimi-chae Muchim’ (Seasoned Dried Shredded Squid) using a special recipe that incorporates mayonnaise. This makes the squid soft and moist, unlike the sometimes tough texture, and deliciously nutty. It’s a perfect side dish for rice!
Step 2
First, prepare 350g of dried shredded squid. Lightly rinse it under running water to remove any dust or impurities. Drain it thoroughly in a colander. Then, cut it into bite-sized pieces, about 5-7 cm long. This ensures the seasoning mixes well and makes it easy to eat.
Step 3
Now it’s time to mix in the seasonings! First, have 1 teaspoon of sesame seeds ready. Sprinkling these on top at the end will add a lovely nutty aroma and make the dish look even more appealing.

Next, add 1 tablespoon of sesame oil. Sesame oil plays an important role in enhancing the flavor of the dried squid, adding a wonderful savory depth.

Add 2 teaspoons of oligosaccharide syrup for sweetness and a nice sheen. While corn syrup can be used as a substitute, oligosaccharide provides a slightly cleaner sweetness.

Add 1 teaspoon of soy sauce, which is our secret ingredient for umami. Be careful not to add too much, as it can make the dish too salty. Adjust the amount to your preference.

Next, add 1 teaspoon of gochugaru (Korean chili powder). This is the base for the red color and will add a gentle spiciness.
