Main Ingredients

  • 1/3 Korean radish (about 300g)
  • 1/4 carrot (about 50g)
  • 1 stalk green onion (white parts mainly, about 50g)

Seasoning & Aromatics

  • 1 Tbsp minced garlic
  • 1/2 Tbsp coarse sea salt (or adjust to taste)
  • 3 Tbsp perilla oil (adds a rich, nutty flavor!)

Cooking Instructions

Step 1

First, wash all the vegetables thoroughly, including the radish, carrot, and green onion, and prepare them. Lightly pat them dry.

Step 1

Step 2

Slice the radish into pieces about 0.5cm thick, either in half-moon shapes or julienned. Avoid slicing them too thinly, as they can become mushy; maintaining a moderate thickness is key.

Step 2

Step 3

Julienne the carrot to a similar thickness as the radish. This adds a beautiful color and makes the dish more visually appealing.

Step 3

Step 4

Slice the green onion finely or on a diagonal. Using mainly the white parts will provide a more fragrant flavor.

Step 4

Step 5

Now, place the prepared radish, carrot, and green onion into a deep pan or pot. Arrange them attractively. You can even arrange them in a circular, flower-like pattern for a pretty presentation.

Step 5

Step 6

Sprinkle the minced garlic and coarse sea salt evenly over the vegetables. Using coarse salt helps to gently season the dish while highlighting the natural sweetness of the radish.

Step 6

Step 7

Finally, drizzle the nutty perilla oil around the edges of the pan or over the vegetables. You can use sesame oil, but perilla oil truly brings out the distinctive flavor of braised radish.

Step 7

Step 8

Cover the pan with a lid and cook over medium heat for about 3 minutes, allowing it to steam. This steaming method uses the vegetables’ own moisture to cook them gently, resulting in a tender texture.

Step 8

Step 9

After 3 minutes, lift the lid and gently toss everything together to ensure even cooking. The vegetables should be slightly tender at this point. Cover again and cook for another 2 minutes over medium heat. The radish will become translucent and tender, signifying it’s ready.

Step 9

Step 10

Turn off the heat and immediately transfer the warm braised radish to a serving container. You now have a healthy and delicious radish side dish that looks as good as it tastes, ready to grace your table!
