Making Creamy Sundubu Soup with Firm Tofu
You can make a wonderfully soft and creamy sundubu soup even with firm tofu! Perfect for the crisp autumn weather, this recipe is quick to make with just one block of tofu, providing a warm and comforting meal. It’s a delightful dish that warms you up from the inside out.
Sundubu Soup Ingredients- 1 block Firm Tofu (approx. 400g)
- 2 cups Water (approx. 400ml)
- 1/2 Tbsp Minced Garlic
- 1/2 Tbsp Salted Shrimp (Saewujeot)
- 1/2 Tbsp Fish Sauce (or Tuna Extract)
Spicy and Sweet Seasoning Sauce Ingredients- 1 stalk Green Onion (white part mainly, finely chopped)
- 2 Tbsp Soy Sauce
- 2 Tbsp Water
- 1/2 Tbsp Minced Garlic
- 1/3 Tbsp Sugar
- 1/3 Tbsp Red Pepper Flakes (Gochugaru)
- 1 Tbsp Sesame Oil
- 1 stalk Green Onion (white part mainly, finely chopped)
- 2 Tbsp Soy Sauce
- 2 Tbsp Water
- 1/2 Tbsp Minced Garlic
- 1/3 Tbsp Sugar
- 1/3 Tbsp Red Pepper Flakes (Gochugaru)
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, prepare one block of firm tofu. Gently crumble it with your hands. The key is to keep some texture, so don’t mash it too finely – aim for soft, fluffy clumps.
Step 2
In a pot, add 2 cups of water and bring to a simmer over medium heat. Once the water is boiling, add 1/2 Tbsp of minced garlic to infuse the broth. The garlic will add depth to the soup’s flavor.
Step 3
When the water is boiling, carefully add the crumbled tofu to the pot. Gently separate the tofu pieces so they don’t clump together as the soup simmers.
Step 4
Add 1/2 Tbsp of salted shrimp (saewujeot) and 1/2 Tbsp of fish sauce (or tuna extract) for savory depth. Saewujeot adds a refreshing oceanic flavor, while fish sauce enhances the overall umami.
Step 5
The basic broth for your sundubu soup is now complete. The soft, fluffy tofu in the clear broth looks appetizing.
Step 6
Next, let’s make the delicious seasoning sauce. Finely chop one stalk of green onion. In a small bowl, combine 2 Tbsp soy sauce, 2 Tbsp water, 1/2 Tbsp minced garlic, 1/3 Tbsp sugar, and 1/3 Tbsp red pepper flakes. Mix well. Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma. Your spicy and sweet seasoning sauce is ready!
Step 7
Ladle the hot sundubu soup into a serving bowl. Top it with 1-2 spoonfuls of the prepared seasoning sauce. You can adjust the amount of sauce to your preference. Enjoy a hearty and delicious meal with this warm bowl of sundubu soup!
