Easy and Flavorful Pork Patty Recipe Using Ground Meat
Feeling tired of the same old side dishes? This recipe is perfect for using up ground pork in your fridge! We’re making Donggeurangttaeng, packed with vegetables for a healthy and delicious meal. It’s a fantastic option for kids’ lunches or as a savory snack with drinks.
Ingredients- 150g ground pork
- 1 handful minced mushrooms (e.g., oyster mushrooms)
- 1 handful minced carrot
- 1 handful minced onion
- 1 handful minced green onion
- 1/2 Korean chili pepper (cheongyang), finely chopped
- 2/3 block firm tofu
- 2 eggs
- Flour for coating (amount as needed)
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor and texture. Finely mince the oyster mushrooms, carrots, onion, and green onions. If you prefer a chewier texture from the mushrooms, chop them slightly coarser rather than making them very fine.
Step 2
Next, we’ll remove excess moisture from the tofu. If you don’t have cheesecloth, place the tofu on a fine-mesh sieve and gently press it with a spoon to drain. Be careful not to press too hard, or the tofu might slip through the sieve holes. A little moisture remaining is perfectly fine.
Step 3
Combine all the prepared ingredients in a large bowl. Add the ground pork, minced vegetables, and the drained tofu together.

If you enjoy a bit of spice, finely chop half of a Korean chili pepper (cheongyang) and add it to the mixture. If you’re making this for children, you can omit it or substitute it with a milder pepper.
Step 5
A quick note on the eggs! You’ll need two eggs in total. One egg will be mixed into the patty mixture, and the other will be used for the egg coating later. Please add only ONE egg to the bowl with the other ingredients for now. The second egg is for dipping the patties before frying.

Mix the ingredients in the bowl thoroughly with your hands, like kneading dough. Add one egg, a pinch of salt, and a pinch of black pepper. If you accidentally added two eggs, don’t worry; the mixture might be a bit softer, but it will still work. Just shape it carefully. For seasoning, I prefer a mild taste with just salt and pepper, but you could add a dash of oyster sauce for extra flavor if you like.
Step 7
Now, it’s time to shape the patties. Take portions of the mixture and form them into small, flattened rounds. If the dough consistency is right, they should hold their shape well. Once shaped, lightly coat each patty with flour, then dip them in the beaten egg (the second egg you set aside). Heat some cooking oil in a frying pan over medium heat and fry the patties until golden brown on both sides.
