Homemade Pork Patties (Donggeurangttaeng) for Chuseok: A Tender and Flavorful Delight
This recipe is perfect for using up leftover vegetables in your fridge! Instead of using pre-ground pork, we’re using thinly sliced pork belly for an incredibly delicious result. These patties are a fantastic side dish for any meal, especially during the Chuseok holiday. ^^
Main Ingredients- Thinly sliced pork belly: 2 handfuls (approx. 200-250g)
- Carrot: 1/2 (approx. 50g)
- Onion: 1 (approx. 100g)
- Tofu: 1 block (approx. 300g)
- Perilla leaves (깻잎): 2 handfuls (approx. 10-15 leaves)
- Eggs: 2 large
- Pancake mix (부침가루): 1/2 cup (using a paper cup for measurement, approx. 50g)
- Salt: 1/2 Tbsp (approx. 5g)
- Cooking oil (generous amount)
- Black pepper (a pinch)
Cooking Instructions
Step 1
Prepare the ingredients: Instead of ground pork, utilize leftover thinly sliced pork belly from your fridge. Wash all vegetables (carrot, onion, perilla leaves) thoroughly, pat them dry, and mince them very finely. For the tofu, press out as much water as possible using a clean kitchen towel or cheesecloth, then mash it with a fork or your hands.
Step 2
Season the mixture: Combine the minced vegetables, mashed tofu, and sliced pork belly in a bowl. Add a pinch of black pepper (about 5 shakes) and half a tablespoon of salt to season the mixture. Adjust salt to your preference.

Add eggs and mix: Crack two eggs into the bowl with the prepared ingredients and mix everything together until well combined.
Step 4
Adjust the consistency: Add half a cup of pancake mix (measured with a paper cup, approximately 50g) to the bowl. Mix and knead the ingredients until they form a cohesive dough. The consistency should be slightly thick, holding its shape when scooped with a spoon. If it’s too wet, add a little more pancake mix; if it’s too dry, add a tiny splash of water.
Step 5
Shape and cook the patties: Heat a generous amount of cooking oil in a pan over medium heat. Once the oil is shimmering, scoop about a tablespoon of the mixture at a time and drop it into the pan. Gently flatten each portion with the back of the spoon to form round, slightly flattened patties.
Step 6
Brown both sides: Cook the patties until the bottom side is golden brown and crispy. Then, carefully flip them over and cook the other side until it’s also golden brown and cooked through. Making the patties slightly thicker helps them hold their shape better and prevents them from crumbling, ensuring a beautiful presentation.
Step 7
Vary the size for fun: You can start by making bite-sized patties for easy eating, or for a more substantial meal, try making larger ‘steak-sized’ patties later on. For Chuseok ancestral rites, present them beautifully shaped, and for everyday meals, enjoy them in generous portions.
