I received dried seaweed as a gift, but it was too stiff and lacked flavor, so I pondered how to prepare it and decided to make it into braised seaweed. After simmering it with a savory sauce, it turned out wonderfully soft and delicious! This recipe transforms stiff seaweed into a melt-in-your-mouth delight. Perfect as a side dish for rice or as a snack, try making this braised seaweed right away!
Main Ingredients- 3 sheets of dried seaweed (gim)

Cooking Instructions
Step 1
First, cut the dried seaweed into bite-sized pieces, about 5x5cm or 6x6cm. Cutting them too small might cause them to break apart during simmering, so aim for a suitable size.
Step 2
Place the cut seaweed sheets in a preheated pan over medium-low heat and lightly toast them on both sides. This helps to remove any fishy smell and enhances their nutty flavor. Toast for about 1 minute, being careful not to burn them.
Step 3
Once the seaweed is lightly toasted, increase the heat to high and add the measured 100ml of water. Bring it to a boil. Boiling over high heat allows the seaweed to absorb the sauce more effectively.
Step 4
When the water starts to boil, reduce the heat back to low. Now, add all the braising sauce ingredients: 1 Tbsp sugar, 1 Tbsp cooking wine, and 1 Tbsp soy sauce. Let the seaweed simmer gently in the sauce over low heat to allow it to absorb the flavors fully. Slow simmering is key here.
Step 5
As the sauce begins to bubble, increase the heat back to high. Stir continuously and quickly to ensure the sauce evenly coats the seaweed and reduces without burning. Keep a close eye on it to prevent scorching.
Step 6
When most of the liquid has evaporated and the sauce has thickened, reduce the heat to low again. Finally, drizzle in 2 Tbsp of sesame oil and mix well until the seaweed is glossy and evenly coated. Adding sesame oil at the end preserves its fragrant aroma.
Step 7
Arrange the deliciously braised seaweed on a serving plate. Garnish generously with toasted sesame seeds for an extra nutty flavor and visual appeal. Your exquisite braised seaweed is now ready to enjoy!
