A ‘frittata’ is an Italian-style omelet made by mixing beaten eggs with various vegetables, meats, and cheeses, then cooking them. I’ve created my own special recipe packed with nutritious ingredients that are perfect for your little one! While I baked mine in madeleine molds, you can easily make this delicious dish in a microwave or on a stovetop in a frying pan. This tender frittata is a wonderful first food for your baby. Let’s make it together!

Main Ingredients
  • 100g ground beef (lean cut)
  • 55g fresh spinach
  • 6 cherry tomatoes
  • 15g shiitake mushroom
  • 55g sweet onion
  • 15g yellow bell pepper
  • 15g red bell pepper

Batter and Seasoning
  • 0.5 tsp minced garlic
  • 70ml milk (baby formula/milk)
  • 1 tsp baby soy sauce
  • 1 egg
  • 1 slice baby cheese

Cooking Instructions

Step 1

First, let’s prepare all the necessary ingredients for making the frittata.

Step 2

Spinach can sometimes have a lot of dirt. Fill a bowl with plenty of water, submerge the spinach, and gently shake it. The dirt will settle to the bottom, making it easy to remove.

Step 3

After removing the dirt, rinse the spinach thoroughly under running water, making sure to clean between the leaves. This ensures your baby eats safely.

Step 4

Carefully rinse the clean spinach and blanch it in boiling water for just 30 seconds. Be careful not to overcook it, as it can become too soft.

Step 5

Immediately after blanching, rinse the spinach in cold water to cool it down, then gently squeeze out excess water by hand.

Step 6

Chop the drained spinach very finely so it’s easy for your baby to eat. Finely chopped spinach will have a better texture.

Step 7

Now, let’s prepare the other vegetables. Finely mince the onion, yellow bell pepper, red bell pepper, and shiitake mushroom. Keeping them similar in size will help them cook evenly.

Step 8

Heat a frying pan over medium-low heat. Add the ground beef, minced onion, and 1 tsp of minced garlic. Stir well to prevent burning as you cook.

Step 9

Once the beef has lost its pink color and the onions become translucent, it’s time to add the next set of delicious ingredients.

Add the minced bell peppers and shiitake mushrooms to the pan and stir-fry them together. Cook until the vegetables are tender and their flavors meld with the beef.

When the ingredients are almost fully cooked, add 1 tsp of baby soy sauce for an extra layer of savory flavor. Be mindful not to make it too salty.

Stir well after adding the soy sauce to ensure it’s evenly distributed. Then, turn off the heat and spread the mixture onto a plate to cool completely. If it’s too hot, it will cook the eggs prematurely!

In a large bowl, combine the completely cooled beef mixture, 70ml of milk, 1 fresh egg, and the finely chopped blanched spinach. Mix to create the smooth frittata batter.

Step 14

This is the step where we combine the filling for our delicious frittata. Gently whisk all the ingredients together until you have a smooth batter with no lumps. A smooth consistency is key.

Carefully make small cuts into the baby cheese to divide it into 12 pieces. This will make it easy to place on top of the frittatas.

Wash the 6 cherry tomatoes and cut each one in half, creating a total of 12 pieces. These will be cute decorative toppings for the frittatas.

Spoon the beef and spinach batter into your madeleine molds or other baking molds, filling them about two-thirds full. Be careful not to overfill.

Decorate the filled molds by placing half a cherry tomato and one piece of baby cheese on top of each frittata. Colorful toppings will make them even more appealing to your child!

Carefully place the molds into a preheated oven at 180°C (350°F) and bake for about 15 minutes, or until golden brown. Adjust the baking time based on your oven’s performance.
